It’s cookie Monday again this week! I promise not every Monday will be cookie Monday, but I really wanted and share these light and fluffy, melt in your mouth Pumpkin Sugar Cookies! I think they are more Snickerdoodle than sugar cookie. What ever you want to call them…I call them delightfully delicious! I love how quickly they came together and how beautifully they bake!
