Hi Kathy!

I used a small roasting pan that I have with a small roasting rack underneath it. I&#039;m not sure how much broth was in the bottom of the pan for the gravy...I&#039;d guess about 1 1/2 cups and I probably added a can of chicken broth to bring it to 3 cups plus for the gravy.

I am making this today. I noticed in the full turkey recipe you place softened butter under the skin before placing the cheese cloth on it. The breast recipe does not have that instruction. Is there a specific reason for that. Just wondering with it being just the breasts lifting the skin it might not stay in place? Just wondering, before I put butter under it.
