I&#039;m sorry if the cook time was off a bit for you. Sounds like 30 minutes would have been perfect. Just check the internal temp to be safe. If this was me freezing individual servings, I would keep the sauce separate from the breaded cutlets. I think if you freeze them together the cutlets will get &quot;soggy&quot;. However, if you were to freeze it with the sauce on the side and the cutlet on top of the pasta, that might fix the issue of soggy chicken. 					<description><![CDATA[I have made this TWICE now! I am cooking for two, so using chicken cutlets (about  1 pound - 7 cutlets). I had some chicken in the fridge I needed to cook, so I made this when I was only ONE person - ate one cutlet, have six left over. I did cook for 45 minutes but the cheese on top was way overcooked - the chicken was just on the verge of being dry, but still was tender and somewhat moist. Oh! I don&#039;t pound mine. Good thing I didn&#039;t or the chicken WOULD have been way too dry! QUESTION: Can I freeze these with the leftover sauce on top? How long do you think they would last in the freezer? I am thinking of three packets of two cutlets each, to make three separate individual meals. Thank yo for this WONDERFUL recipe! I have never tried anything like this before - it was DELECIOUS!
