Hi Joan!
I would double the seasonings and liquids just like you are doing two separate roasts, even though you are doing them in the same crock pot. The cook time may need to increase to 5 hours, but I would check it at 4. Your internal temp should be at least 165. Other than that you should be good to go. It sounds like a wonderful Thanksgiving with lots of memories to be made! Enjoy!
