Hi Tony!
Yes! You can fry them in the air fryer, however you will need to either spray them with some type of cooking spray or brush them with butter before frying!

I’m just a little ambivalent about any recipe that calls for frying in oil. So I was wondering if these can be made in a air fryer?

In reply to <a href="https://www.norinesnest.com/homemade-taquitos/comment-page-1/#comment-5065">Karen Van Eseltine</a>.

Hi Karen!
Sorry it's taken me a few days to get back to you! I've been down with the flu and it's been a bad one! So I'm sorry for not responding sooner. Right off the bat...my first thought is too much steam. Corn tortilla's...more so than flour, obviously, tend to fall apart and almost disintegrate in your hands when they have too much moisture in them just like they can do if they are too dry! My second thought...to answer your question, YES! Your tortillas could be too old. I've have often found out dated tortilla's on the shelf at the market. I always check them. It's so frustrating.
Now let me quickly go over what I do, and it may sound funny, when making anything rolled with corn tortilla's. I generally take a stack of at least a dozen tortillas, I ONLY use white corn tortilla's...if find them less dry, place them on a paper plate, cover them with my plastic microwave splatter cover (I get mine at Walmart for $5.00), and microwave them on high for 1 minute! Remove them from the microwave, and cover with a clean dish towel. I pull one out at a time. Sometimes the top tortilla is too moist...so I set it aside to cool down. Start with the second tortilla, or even the third. Now this part sounds crazy but I flip the tortilla over, fill it, roll it, secure it with a tooth pick and then place the taquito on a plate and cover it with another cloth. Now this "flipping" part...lol...I have found that for some reason, and I'm sure there is one, one side of the tortilla tends to fall apart more easily than the other. Usually it is the topside that I have pulled from the stack and the bottom holds together better when rolled. I know it sounds totally crazy...but it works...every time! Now I may have a few that will crack. Most of the time that is because my meat is too wet and has soaked through the tortilla causing it to fall apart. Generally the hold together really well with this method.
Whew...that was a really long answer to your simple question. Hope this helps. I hope you try them again. I truly believe with Mexican food the more you practice the better you get! It's becoming familiar with the dynamics of the products. Thanks so much for stopping by and I hope you have a GREAT week and a wonderful Holiday!
Happy Nesting!

My 'comment' is actually a ?... So I heated up my microwave with a mug of water in it to get it nice and steamy. Then I put my just purchased that day corn tortillas in a plastic bag and sprinkled some water into it. Set for 1 minute and hit start. They weren't quite warm so I ran it for another minute. Perfectly just warm corn tortillas came out of the microwave. So I started the process of filling and rolling. To my disappointment they still fell apart. I even tried using 2 tortillas with not much better outcome. 8 tortillas, & only 3 successfully rolled & fried tacquitos later i gave up and turned to chrome for help. Which led me to you. So now i ask, could the tortillas I purchased be old? Perhaps beyond softening?

[…] Taquitos, or “Rolled” tacos, as some call them, are truly our number one favorite main dish! There’s just something about grabbing a taquito and dipping it into that fresh salsa and homemade guacamole! YUM! Makes my mouth just water thinking about it! […]
