Hi Jo!
Sorry I&#039;m so late getting back to you. The frustration in trying to find ingredients these days!! You could substitute the orange and pineapple Ice Cream but it won&#039;t have the same taste as the Orange Creamsicle. The sherbit or sorbet is tangy and adds the variation of flavors with the vanilla ice cream and the sorbet/sherbit.  However, that all said, it certainly doesn&#039;t mean you can&#039;t use it and create your own new dessert that sounds delicious! I&#039;m always game for trying something new and seeing if it works. You can&#039;t really lose with ice cream in the summer!

Of course you can! I&#039;d recommend a shortbread cookie or Golden Oreo Cookies. They will give you the same type of consistency that the coconut cookie brings to this recipe. I hope you love this recipe as much as I do! It&#039;s one of my very favorite desserts in the spring and summer! So refreshing!
