Carne Asada

It's time for my 2nd favorite holiday of the year! Cinco de Mayo! The day we celebrate one of THE most important food groups on the food pyramid... Mexican food! Huh? You heard me! In our little nest we realize how extremely important it is to make sure we adhere to the major food groups! Okay, all joking aside, because our daughter and son are both hispanic we always celebrate the holiday by serving our favorite Mexican foods. Usually I make taquito's, chili rellenos and fresh homemade salsa. They're great! However, lately we have all developed a love for Carne Asada! So, I decided to come up with my own recipe. I'm just super brave like that! Or, crazy?!

Homemade Tamales

I was never a huge fan of Tamales. Then I tasted my friends Tamales! Whoa..Game changer! I begged her to teach me how to make them! She took pity on me. Thank heavens! Now they're a yearly tradition at this Nest. Yes there's a little bit of prep and work to them, but if I can make them...YOU can make them!

Mexican Haystacks

Hawaiian Haystacks have always been a favorite at this Nest. However, the other day I was craving Mexican and got to thinking...What if you changed out the steamed rice for Spanish rice...and involved salsa and avocados! Sounded like a FANTASTIC idea to me...and it was!!!

One of my favorite side dishes when having Mexican Food is the rice! I love a good Spanish rice. Especially if it is packed with the warm flavors and spices of true Mexican food. A few years ago I came up with this home style version that is so easy and so flavorful! So much better than what you find at your local restaurant. I bet you have the secret ingredient in your cupboard right now!

Growing up the only taco I knew was the "ground beef" taco! While I still love them it's so much more fun to eat the "grown-up" tacos of the present day! Like these AMAZING flavorful, juicy, and tender Shrimp Tacos on a bed of colorful cabbage mix and topped with a lovely Cilantro Avocado Lime Crema Sauce! Yep...sometimes adulting is FUN! Sometimes... lol
