Thanks so much for stopping by and sharing! I love this cake and I’m not a huge fan of Vanilla cake! The buttercream frosting does make a LOT! I always have extra too. I place mine in an air tight container and refrigerate it. It works beautifully on a small batch of cupcakes or sugar cookies! I need to work on figuring out how to cut that recipe down to 3/4ths of the original and then it would be perfect!! Have a wonderful Christmas.

Thank you for this recipe! My family truly enjoyed this cake! While I will admit that I have never appreciated a vanilla/buttercream icing cake, I prefer chocolate icing :), my family all enjoyed, no, they loved it! We did run into a little issue with the quantity of the icing; the first time I made this cake, I cut the icing recipe in half (based on comments from other bakers on your site) and hubby said it didn’t not create enough icing for the two layered cake. So I remade the cake the next week using the icing ingredients quantities as listed. True to fellow commenters, it made so much icing that try as hard as possible, I couldn’t use all of the icing and hubby then said it was way too much icing. So now I’m forced to make the full batch of icing and use appropriate amount on cake and discard the rest. In any case, the cake is a winner! I plan to make this cake for the family Christmas dinner. Thanks again!

I think we cleared this up in the email…but for the sake of others, I use all-purpose flour and measure in cups. Enjoy the cake!

Thanks so much for stopping by and sharing! This frosting recipe really does make a lot of frosting and I need to go back in and make sure I let my followers know that they can cut the recipe in half. I love to pile the frosting up high on my cupcakes. Thanks for bringing that to my attention. I like to make bigger batches and refrigerate it for later use. I’m so glad you liked the cupcakes.

This is a great recipe, and the homemade frosting definitely helps make it.

One small critique, the recipe makes a ridiculous amount frosting. We used PLENTY on the cake, but there was genuinely at least 4x’s more than you need.
