Ingredients

  • 6 Tablespoons Butter Softened
  • ¾ Cup Brown sugar Packed
  • 2 large Eggs Room Temperature
  • 1 teaspoon Almond extract
  • 2 cups Original Bisquick Mix
  • ¾ cup Milk
  • 1 cup Cranberries Fresh, or frozen (do not thaw)
  • teaspoon Orange zest
  • cup Old-Fashioned Oats
  • cup Sliced Almonds Toasted
  • ¼ cup Brown Sugar Packed
  • 2 Tablespoons Butter Softened

Instructions

  • Preheat oven to 350°F. Spray a 9-inch spring-form pan with baking spray. Coat with additional flour to prevent sticking. Set aside.
  • In a large bowl, beat 6 tablespoons of softened butter and ¾ cup brown sugar with an electric mixer on medium speed until combined and creamy. Add eggs, one at a time, beating well after each addition. Stir in almond extract. Add orange zest and stir to combine.
  • On low speed, beat in the Bisquick mix alternately with milk until smooth. Fold in cranberries. Spread the batter evenly in the prepared spring-form pan. Sprinkle the top of the cake batter with additional cranberries (optional).
  • In a small bowl, mix all streusel ingredients: butter, oats, brown sugar, and almonds, with a fork, or clean hands, until crumbly. Sprinkle streusel over the batter.
  • Bake 38–45 minutes, until the center of the cake is firm and springs back when lightly pressed, or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Remove sides of pan before serving. Serve warm.
