Easy Fried Rice

An easy and simple traditional fried rice recipe that is better than "take-out"! All you need to do is add the fortune cookie!

Ingredients
  

  • 3 cups cooked long grain white rice
  • 2 Tablespoons sesame oil
  • 1 small white onion chopped
  • 1 minced clove garlic
  • 1 cup frozen peas and carrots thawed
  • 1 Tablespoon butter
  • 2-3 Tablespoons soy sauce more or less to taste
  • 2 eggs lightly beaten
  • 2 Tablespoons chopped green onion optional

Instructions
 

  • Preheat a large skillet or wok to medium-high heat. Pour sesame oil into the bottom. Add the white onion, minced garlic and fry until tender. Add peas and carrots, heat through.
  • Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  • Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through. Add butter. Stir until everything is well combined. Top with chopped green onions if desired.
