Jack-o'-lantern Sloppy Joe Pie

- 1 whole Pillsbury Pie Crust softened as directed on box
- 1 large egg yolk if desired
- 1 teaspoon water
- 1 drop red and yellow food coloring if desired
- 1½ pounds ground beef 80/20 or higher
- ½ cup onion chopped
- 1 cup Salsa Old El Paso Thick-n-chunky
- 1 8 ounce can tomato sauce
- 1 Tablespoon Chili Powder
- 1 teaspoon cummin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 Tablespoons brown sugar
- 1 15.25 ounce can corn drained
- 1 4.5 ounce can green chilies chopped and undrained
- 2 tablespoons fresh cilantro chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat oven to 400°F. Remove pie crust from pouch; unroll on parchment-lined baking sheet. With a sharp knife, cut jack-o'-lantern face from the crust. If desired, place cutout pieces on the crust to create leaves and vines. Secure with a small amount of water.
In a small bowl, mix egg yolk, 1 teaspoon water and food color; brush on crust face. Bake for 9–11 minutes or until the crust is light golden brown.
Meanwhile, crumble ground beef into a 12-15 inch nonstick skillet. Add onion; cook 8 to 10 minutes, stirring occasionally, until the ground beef is no longer pink. Stir in remaining ingredients. Heat to a low boil. Reduce heat to medium-low and simmer for 5 minutes.
Carefully place warm baked pie crust over ground beef mixture and serve.
