Chicken Broccoli Casserole

A comforting blend of tender chicken, fresh broccoli, and creamy sauce baked to golden perfection. This Chicken Broccoli Casserole is the ultimate easy, wholesome meal for any night of the week.

Ingredients
  

  • 2 10 oz packages frozen chopped broccoli
  • 3 cups Rotisserie chicken diced or shredded
  • 2 10.5 oz cans of condensed cream of chicken soup
  • 3/4 cup mayonnaise
  • 1/2 cup milk
  • 1 Tbs lemon juice
  • 1 cup shredded medium cheddar cheese
  • 1 cup bread crumbs
  • 1 Tbs melted butter

Instructions
 

  • Preheat oven to 350°(F). Spray a 9 x13 baking dish with cooking spray. Set dish aside while you prepare the broccoli.
    In a medium-size sauce pan, over medium-high heat, add frozen broccoli and cover with water. Bring the water to a boil. Boil broccoli for 2–3 minutes. Turn off the heat. Cover the pan and let the broccoli set for 10 minutes. Drain well.
    Place the steamed broccoli on the bottom of the prepared baking dish evenly. Layer with prepared chicken.
    In a large bowl, combine the cream of chicken soup, mayonnaise, milk, and lemon juice. Mix until well combined. Spread evenly on top of chicken. Sprinkle with shredded cheese.
    In a small bowl, combine breadcrumbs and melted butter. Sprinkle on top of the cheese. Place casserole in preheated oven. Bake for 40–45 minutes until bubbly and the breadcrumbs are golden brown. Remove from oven and let set for 5–10 minutes before serving.
