The women at this Nest love fresh Strawberry Rhubarb Pie! We love it so much I planted 3 huge rhubarb plants in the backyard and we anxiously wait every spring for them to get large enough to cut so that I can make one of these amazing pies! Nothing say’s Country dessert like fresh, straight from the oven, strawberry rhubarb pie! This year it took a little longer for the rhubarb to get where it needed to be but…it was SO worth the wait!
Cupcakes! (Que the heavenly music) Or, as I like to refer to them, Little Carb Cups of Joy! They make me… SO happy! I love, love, love to make cupcakes! ( Did I mention I love to make cupcakes?) Anywho… last week I signed up to make a bake good for a bake sale some girls at our church were having. I knew right away I would make cupcakes. It makes perfect sense if you think about it. You make a cake and you have to turn over all the “goods!”. It’d look kind of silly to hand over a cake with a couple of slices missing! (Not that I wouldn’t! Which is really pathetic when you think about it!) You make cupcakes…well…you can keep a few out for yourself! Which I did! I mean for crying out loud you HAVE to taste test the goods you are donating! It’s the considerate thing to do!
In my family growing up, strawberry shortcake was not a dessert! Say What?! You read that right! Grandpa Howard insisted that strawberry shortcake was, in fact, the main course! (There’s a man after my own heart!) So, if you happened to come on a night strawberry shortcake was being served, you best not be looking for chicken and potatoes, because there was none to be had!
It’s Spring! One thing I absolutely love about spring are all the fresh strawberries you can find in your local market. They’re screaming “Hey! We’re over here!”. Admit it! Your cart just automatically pulls over in their direction.I grew up in a small town in San Diego County, California. We were surrounded by strawberry fields! One of things I miss about California, besides the ocean, are those wonderful red gems of juicy fruit! Every spring I would watch those specks of red starting to dot the hillsides. It was glorious! I just knew that any day, I would get to go to the strawberry stand with my Mom and pick up a flat of berries. I also knew I would sneak one, bite into it, and have the juice just run down my chin! (I might actually be drooling right now!) There is nothing like giant, fresh picked, strawberries! I’m pretty sure there are going to be fresh strawberry stands in heaven! There has to be if it’s going to heaven for heaven’s sake!
