I made an executive North Pole decision! I decided the Santa at your Nest would rather have hot tender Italian flavored Roast Beef Sandwiches on toasted hoagie rolls with melted provolone cheese, sauteed onions, sweet peppers, and mushrooms, than sugar cookies and milk! I’m not saying it’s cause I don’t have my Christmas cookies ready to post…NOPE…that’s not it at all! Come on admit it…your Santa would rather have one of these sandwiches any way. Right?!!!
I don’t know about you, but I am super busy cleaning and preparing for the big “Turkey” day… which is right around the corner. The last thing on my mind is what to fix for dinner! (Right?) I’m here to help with that. I’ve got a simple and yummy dinner recipe the whole family will love! Crock Pot Chicken Tacos are the perfect week night dinner when things are crazy and you just don’t have time to cook. You will love how easy they are and… the family will love how delicious they are! You can do Taco Tuesday any time! It’s say’s so in the mommy handbook right under “What to do when your child’s crayon goes through the dryer…again!” 😉
It’s not a pretentious dish, but it is one of our all time favorites! This is just pure down home country cooking at it’s best! The perfect dish for the meat and potato lovers at your Nest!

Today I’m sharing one of my favorite pasta dishes! Angel Chicken Pasta with baked chicken on a nest of delecate angel hair pasta and topped with a delectably rich creamy golden mushroom and white wine sauce topped with parmesan cheese! In a word…DELICIOUS! This version is made in the crock pot, but don’t let that fool you into thinking it’s just another “every day” meal! This dish is elegant enough to serve to company. You are going to absolutely LOVE this dish! The flavors are out of this world!
I was busy canning peaches this week and helping my daughter dehydrate cinnamon apple slices. What to make for dinner was not high on my priority list. Not to mention, after canning all day, the last thing I wanted to do was cook! What I needed was a meal I could toss into the crock pot that morning and forget about it till dinner time. I have been craving a chicken and wild rice soup! I’ve seen a lot of recipes for them but, they all had a lot of “steps” and I was looking for a “lazy soup”! So, I decided to make my own! This creamy chicken and wild rice soup is the result! Thanks to my handy-dandy crock pot, the house smelled heavenly all day…almost like Thanksgiving! This is my new favorite “go to” soup recipe for the upcoming cold Fall and Winter months! It’s delicious! Seriously… It’s REALLY delicious and SO easy! You’re going to love it and so will all the other birdies at your Nest! Come take a peek…
