Salted caramel is all the rage right now and rightly so! I decided to jump on the band wagon! Boy am I glad I did! These Salted Caramel Chocolate Chip Pecan Cookies are the VERY BEST cookie I have EVER made or eaten! This recipe makes a big batch of cookies, but you can cut the recipe in half so don’t let that scare you off. You don’t want to miss making these! Mars and I just about went into a cookie coma over here at our Nest this weekend gorging ourselves on these beauties! I’m proud to say these are my own creation and it was worth burning a few brain cells to come up with them! You NEED these in your life! They are every bit as good as they look! Can you tell I’m in love with this cookie! I really am!

If you’re looking for a GREAT carrot cake this is it! It always receives rave reviews when I serve this cake! Even to those who aren’t carrot cake fans love this cake. I searched high and low to find this recipe. I wanted one without raisins, because they are evil and should not be in baked goods…but one that was packed with all kinds of other fantastic ingredients! The stars of this cake are all winners…coconut, crushed pineapple and chopped walnuts! All brought together with a fluffy cream cheese frosting.

Today I’m sharing a wonderful Cherry Crumb Coffee Cake. Yum! I’m a coffee cake fan! Always have been. What makes coffee cake… coffee cake? The batter is heavier than your usual cake batter. It’s one of the reason’s the “bundt” pan was invented and became popular in the 1950’s. The hole in the center allowed for the heavier batter to cook all the way through without having the center still “doughy” and uncooked. They also generally do not have frosting. The tradition of coffee cake came from the Danish around the 17th century when it became custom to have a sweet cake with their coffee. Maybe it’s the English blood that runs through my veins but, whatever the reason…I just know I L.O.V.E. a good, easy to make, coffee cake and…THIS is all that and more!
