What better way to celebrate Valentine’s Day than with a delightful treat that combines the sweetness of strawberries, the richness of brownies, and the fluffiness of marshmallows! Say hello to Strawberry Brownie Marshmallow Valentine’s Kabobs!

This Valentine’s Day, treat yourself and your loved ones to something truly special with my Strawberry Brownie Marshmallow Valentine’s Kabobs.

Their delightful combination of the flavors of the holiday, and charming presentation, are sure to win hearts. I’m almost embarrassed to post these as a “recipe”! They are more of a unique “How To” dessert!

This fun idea can be made with many variations and favorite personalized treats!

You can use donut holes instead of brownies, or even cake balls! It’s a fun dessert that the whole family will love, especially the kiddos!

Let me share with you how I made these fun Valentine’s Chocolate Strawberry Dessert Kabobs.

  • One 8×8 pan of homemade brownies – You can also use boxed brownie mix, or store-bought brownies.
  • 12 chocolate dove hearts or other chocolate Valentine’s candies.
  • 24 Large Valentine Marshmallows
  • 24 Fresh Strawberries – washed and dried
  • ¼ cup Ghirardelli Chocolate Melt Waffers
  • 12 – 12 inch long Bamboo Kabob Skewers

For the brownie portion of this recipe I used my Best Homemade Brownie Recipe. I love the texture of this brownie recipe. It creates a cakey brownie loaded with semi-sweet chocolate chips. However, you do NOT have to bake the brownies from scratch.

I baked them in an 8 x 8 baking dish. I highly recommend lining the baking pan with parchment paper to make removing the brownies easier.

If baking the brownies from scratch, remove them from the oven and allow them to cool for about 20 minutes before placing the hearts on each square. You want the brownies warm, this allows the chocolate hearts to melt slightly into the brownie.

NOTE: If using store-bought brownies, you can warm them slightly in the microwave and then place the chocolates on top.

Pro-Tip: When they are first removed from the oven, score them into 12 even squares, by gently pressing the edge of your spatula, or butter knife, into the warm brownies. Don’t try to cut them all the way through while they are still warm, they will crumble. This helps to know where to place the chocolate dove hearts.

One of the things I love about this Valentine treat, is that you get to be creative! Any kebab-worthy items can be used and adjusted to suit your personal tastes.

If you don’t want to bake brownies, you can buy brownies in the bakery section at your favorite market. You can use mini-muffins, or donut holes, and make them a Valentine breakfast treat! Even mini pancakes folded in half, or cut waffles with a small heart cookie cutter.

TIP IDEA: If using a box mix, or scratch brownie recipe, divide your brownie batter, and pour into mini muffin pans sprayed with non-stick cooking spray to make mini brownie bites!

To finish off the brownie squares, in a microwave-safe bowl, melt ¼ cup Ghirardelli chocolate melts per the package’s instructions.

Place the melted chocolate in a piping bag, or a Ziploc sandwich bag. Snip the end, or corner, just a tiny bit and drizzle chocolate over the top of the brownies and chocolate hearts! You can also use a spoon and go back and forth quickly over each heart.

Allow the chocolate to set. You can place the brownies in the refrigerator to cool and expedite the setting of the melted chocolates.

Once the chocolate has set and is firm, cut the brownies with a sharp knife into 12 equal squares, place them on wax paper. Make sure the brownies are cool to room temperature.

PRO-TIP: If you don’t want to add the chocolate hearts, but still want to incorporate a “Valentine’s Day” theme, you can use a heart-shaped cookie cutter and cut them into heart-shaped brownies.

Now for the fun part! Assembling the Strawberry Brownie Kebabs! (You say Kabobs, I say Kebab! It’s all good!)

Using one long bamboo skewer, begin with a marshmallow. The marshmallow is sticky inside and is a great “anchor” for the top and under the bottom of the brownie to hold it in place!

Thread the marshmallow onto the end of the skewer. The marshmallow will leave a little sticky on the end of the skewer. Don’t worry about it. As soon as you move onto the next ingredient, it will clean it off.

Repeat with the remaining ingredients, staggering them in a pattern. I like to start with a marshmallow, then a fresh strawberry, and then a brownie! Then repeat with the marshmallow and end with a strawberry!

Place the prepared Kabobs on a cookie sheet. If preparing ahead of time, cover with saran wrap and store in the refrigerator until ready to serve. Set them out 30 minutes prior to serving to bring to room temperature.

This easy recipe is great for a baby shower, housewarming party, day of love, or “galentine’s” day party! You can customize them for any themed event.

I’m sure you’ve been to parties where they serve fruit kabobs. It’s a great way to serve fresh fruit. However, these dessert kebabs are a great change-up to tempt the sweet tooth of your guests by adding in some fun goodies like brownies, cake balls, chocolate candies or more. An easy treat and dessert!

If you’re making these kabobs for a party, consider setting up a DIY kabob station where guests can assemble their own combinations. Place all the items in bowls or on platters. Add other fruits like pineapple chunks, banana slices, and melon. Serve several “dessert” options. Simple ingredients such as mini-cupcakes, pastries, valentine gummies, chocolate truffles, etc.

Include “dippers” like chocolate sauce, caramel sauce, hot fudge sauce, melted white chocolate, and homemade whipped cream. There are a myriad of ways to make this the perfect treat for your guests.

Ingredients

  • 12 individual brownies-cut into 2 inch squares
  • 24 fresh strawberries, washed and dried
  • 24 Valentine's marshmallows
  • 12 Dove Chocolate Hearts
  • ¼ cup Ghirardelli Chocolate Melts
  • 12 Bamboo Kabob Skewers

Instructions

  1. If making the brownies from scratch, prepare per recipe, allow them to cool slightly, score the brownies into 12 equal 2-inch squares. Place a Dove chocolate heart in the center of each warm brownie.
  2. Melt Ghirardelli chocolates in a small microwave safe bowl per package directions. Drizzle over each chocolate heart on top of the brownies. Cool completely until the chocolate is set. Cut into 12 separate brownies. Remove the brownies from the pan and place on wax paper.
  3. Starting with a marshmallow, thread the marshmallow onto the bamboo skewer, followed by a fresh strawberry, brownie, marshmallow, and end with another fresh strawberry.
  4. Place on a serving platter and serve immediately. If preparing ahead of time, cover with saran wrap and store in a refrigerator until ready to serve.
