Cashew Chicken is one of my favorite Chinese dishes! This casserole is a great “stand-in” for that dish when going out to dinner isn’t an option…especially with a big hungry family! It’s one of my personal favorites. It can be made the day before and popped into the oven for a quick easy weeknight meal that the whole family will love. Not too mention, if your lucky enough to have any leftovers…lol…it makes for a great “re-heated” lunch dish!
I did it! I went over to the dark side! I took a perfectly innocent head of Cauliflower and turned it into the most AMAZING veggie and ham Fried Rice and topped it off with rich flavorful boneless skinless chicken thighs.I only have one thing to say… “This is Cauliflower?!!!” It’s gonna rock your socks my friends! Bonus…it’s LOW CARB! What is happening to me!

I’ve got an amazingly easy and delicious recipe to share with you today! Slow Cooker Chicken Chili Verde. I’m not sure which adjective adequately describes this dish…Yummy? Mouth-Watering? Spectacular? Luscious? Flavorful? I have to go with “All of the Above”! Seriously, the flavors going on in this dish, are gonna knock your socks off…unless your not wearing socks…then I have no idea what’s gonna happen? I have a love-hate relationship with BBQ. Which is why I created this delicious slow cooker pulled pork sandwich. It’s my “go-to” recipe for large Family Parties or Summer BBQ’s. The classic coleslaw on top of the pulled pork, combined with the BBQ sauce, makes for one AMAZING juicy lip smacking sandwich! You’re gonna love it…and so will the relatives!
