Confessions…This Nest is not loaded with traditional spaghetti lovers! (Including the head “chick”.) It’s true…I’m not a big lover of spaghetti. Oh, I made it while the kids were growing up and my husband loves it…but the rest of us? Eh! So I decided to go another direction…and let’s just say…everyone LOVED it!

I’ve been getting my “Italian on” the last week or so! Which is really interesting… because the only Italian running through my veins is when I eat pizza… or snarf down a piece of Tiramisu! Hmmm? Yep…I’ve been focusing on rich creamy sauces tossed with al dente pastas and delectable meats…like this Ah-mazing dish with it’s tender juicy Pork Tenderloin Medallions. Is it good? Let’s just say “somebody” had three servings…and it wasn’t me! Not because I didn’t want to…but because it was ALL GONE! lol You have got to try this one friends. It’s beyond delicious!
I’m always late to the party! Yep…I fought the “Low Carb” movement as long as I could. I decided if I was joining this party I was bringing my “A” game with this Salmon Bowl! Made on one baking sheet and served up in one bowl…this dinner for two is FANTASTIC! Have more than two? Double it! Easy Peasy! Get ready to be WOWED! This is not your typical “low carb” meal!
Winter is “cold and flu season”! I think everyone in my little country town is sick right now…including yours truly! I don’t know about you…but when I’m sick, I crave comfort food. I want a dish that wraps around me like a big puffy quilt and warms me from the inside out! Like this creamy delicious Chicken Biscuit Pot Pie. Chicken and vegetables topped with big fluffy cheddar biscuits! It will cure what ails ya!
I was never a huge fan of Tamales. Then I tasted my friends Tamales! Whoa..Game changer! I begged her to teach me how to make them! She took pity on me. Thank heavens! Now they’re a yearly tradition at this Nest. Yes there’s a little bit of prep and work to them, but if I can make them…YOU can make them!
I’ve got a GREAT alternative to Prime Rib this Holiday Season. I realize with growing families not everyone can afford to serve Prime Rib! Yikes!!! I wanted to create a main dish elegant and tasty enough for your Christmas dinner table, yet hearty enough for the meat lovers at your Nest. I think I hit the mark with this Pork Shoulder Roast with a Cranberry Apricot Glaze. It’s good my friends. It’s REALLY good!
I’m going to be busy in the kitchen cooking up a storm preparing for the “Big Day”! I’m sure I’ll have prepared way too much food and the refrigerator will be stuffed with leftovers. When we’re tired of Turkey Sandwiches, and reheated Turkey dinner…I’ll whip up this delicious comforting Leftover Thanksgiving Casserole. The addition of White sauce and Swiss Cheese changes it up just enough to make all those leftovers new and exciting!
Are you tired of dried out bland Turkey every year at Thanksgiving? So was I! I had had it! I’ve spent the last 4 years perfecting my Turkey recipe. I did it too! I have the BEST recipe for Turkey. I promise if you’ll follow my steps you’ll have the perfect Turkey this Holiday Season too. It’s so tender you can cut it with a fork, and it’s so moist it melts in your mouth…plus, it’s so flavorful you’ll swoon! Kinda like the Turkey did when he saw the farmer coming with that really big knife!
I love this time of year…I truly do…but I think we can all get burned out on Chili, Turkey, Mashed Potatoes, and all things pumpkin spice. We still crave comfort food, and filling hot dishes…we just yearn for something different. I know I do. Which was why I looked at the container of Ricotta cheese sitting in my refrigerator and thought “I’ve got something big planned for you little buddy! No red sauce tonight. We’re kicking things up around here!” So we did…I think you’re gonna love this new recipe as much as the folks at this Nest did.
Who loves the crisp golden Corn Dogs at the fair, or the mall? I do, I do! It was one of my favorites as a kid. I still love a good corn dog with a healthy dose of mustard. The key word there is “good”! I recently had a little friend over to visit and all he wanted was a “corn dog”. So I dusted off my family cookbook and whipped up a batch of homemade corn dogs. He declared them “good”! I couldn’t agree more. Plus…They’re the perfect Halloween night snack!
