It could be my English blood, but I love muffins,biscuits, and scones! I’m a huge fan of baking powder and baking soda breads! They are so easy to make when you are in a hurry and looking for something yummy! When done right they are light, flaky, and a carb lovers dream come true! Today I’m sharing a wonderful Cherry Crumb Coffee Cake. Yum! I’m a coffee cake fan! Always have been. What makes coffee cake… coffee cake? The batter is heavier than your usual cake batter. It’s one of the reason’s the “bundt” pan was invented and became popular in the 1950’s. The hole in the center allowed for the heavier batter to cook all the way through without having the center still “doughy” and uncooked. They also generally do not have frosting. The tradition of coffee cake came from the Danish around the 17th century when it became custom to have a sweet cake with their coffee. Maybe it’s the English blood that runs through my veins but, whatever the reason…I just know I L.O.V.E. a good, easy to make, coffee cake and…THIS is all that and more! This week is living proof that sometimes things just don’t go as planned! (Like a trip to the Emergency Room! Ugh!) When that happens you just have to pick yer’self up by the boot straps and keep on moving forward! Vacation is over and it was wonderful! Sigh! 10 glorious days with my favorite person on planet earth! I promise the “wrap up” is coming but, in the meantime let’s chat about my love for pancakes! I have always…YES! ALWAYS…I’m not exaggerating… loved pancakes! I honestly do not know how any breakfast food with the word “cake” in it could not be loved?! After 9 days of vacationing and eating out every day, I woke up yesterday wanting a good ole homemade breakfast! (No offense to the new Carl’s pretzel breakfast sandwich. Which I may or may not have had…) When it comes to Saturday or Sunday morning breakfast it has to be something different than every other cold cereal breakfast day of the week! I think of… fluffy scrambled eggs, crispy fried bacon, and…pancakes! Like I said, I’ve loved them for as long as I can remember!
It’s Spring! One thing I absolutely love about spring are all the fresh strawberries you can find in your local market. They’re screaming “Hey! We’re over here!”. Admit it! Your cart just automatically pulls over in their direction.I grew up in a small town in San Diego County, California. We were surrounded by strawberry fields! One of things I miss about California, besides the ocean, are those wonderful red gems of juicy fruit! Every spring I would watch those specks of red starting to dot the hillsides. It was glorious! I just knew that any day, I would get to go to the strawberry stand with my Mom and pick up a flat of berries. I also knew I would sneak one, bite into it, and have the juice just run down my chin! (I might actually be drooling right now!) There is nothing like giant, fresh picked, strawberries! I’m pretty sure there are going to be fresh strawberry stands in heaven! There has to be if it’s going to heaven for heaven’s sake!
