I love Labor Day weekend. Not only do we have our “crab and shrimp boil”, but it’s also our small town County Fair. Oh, I don’t go to the fair to see the exhibits, animals, blue ribbons, or ride the rides. I proudly go for the food! That’s right friends! It’s all about the food. My favorite…you’re looking at it…Funnel Cake. Why wait? It’s peach season… the perfect time to pair these beauties up with homemade funnel cake, and a heaping scoop of vanilla ice cream! I’m struggling to get back into the swing of things after our wonderful Vacation to Virginia! Translation…I’ve been ignoring the garden…and a few other things! I went out the other day and found club sized crookneck squash! I hate to waste…so I decided to fry them up like I do my gigantic Zucchini…only I was lazy and didn’t want to stand at the stove to fry them. So…I didn’t. Instead, I came up with this awesome way to oven fry them! They are AMAZING! I’m thinking I’m going to keep ignoring that garden! (wink, wink) Why not when this is the result!

School is starting! Yikes!!! How did that happen so fast? Seriously doesn’t it seem like we were just starting summer vacation? Ugh! Well…with school starting it’s time to get back into our dinner time routines. I love coffee cakes with that cinnamon sugar crumb topping! So, it would only make sense that I would LOVE a baked donut with that same yummy mouth watering crumb topping. I can’t claim this recipe as my own… because it isn’t. This one belongs to Ashley at Baker By Nature. I did do a little “tweaking” by adding chopped almonds to the crumb mixture and a splash of buttermilk to the dough for a little extra moisture. Who needs a donut shop when you can have these ready in a matter of minutes!
