I’m going to be busy in the kitchen cooking up a storm preparing for the “Big Day”! I’m sure I’ll have prepared way too much food and the refrigerator will be stuffed with leftovers. When we’re tired of Turkey Sandwiches, and reheated Turkey dinner…I’ll whip up this delicious comforting Leftover Thanksgiving Casserole. The addition of White sauce and Swiss Cheese changes it up just enough to make all those leftovers new and exciting!

Are you tired of dried out bland Turkey every year at Thanksgiving? So was I! I had had it! I’ve spent the last 4 years perfecting my Turkey recipe. I did it too! I have the BEST recipe for Turkey. I promise if you’ll follow my steps you’ll have the perfect Turkey this Holiday Season too. It’s so tender you can cut it with a fork, and it’s so moist it melts in your mouth…plus, it’s so flavorful you’ll swoon! Kinda like the Turkey did when he saw the farmer coming with that really big knife!
I love this time of year…I truly do…but I think we can all get burned out on Chili, Turkey, Mashed Potatoes, and all things pumpkin spice. We still crave comfort food, and filling hot dishes…we just yearn for something different. I know I do. Which was why I looked at the container of Ricotta cheese sitting in my refrigerator and thought “I’ve got something big planned for you little buddy! No red sauce tonight. Who loves the crisp golden Corn Dogs at the fair, or the mall? I do, I do! It was one of my favorites as a kid. I still love a good corn dog with a healthy dose of mustard. The key word there is “good”! I recently had a little friend over to visit and all he wanted was a “corn dog”. So I dusted off my family cookbook and whipped up a batch of homemade corn dogs. He declared them “good”! I couldn’t agree more. Plus…They’re the perfect Halloween night snack!
If you love Ribs year round like we do…have I got a recipe for you! Seriously some of the BEST ribs that have ever passed by my lips. I can’t take credit for the recipe. This recipe hails from Jen over at Carlsbad Cravings…one of my favorite food bloggers. I’m not sure I would have thought to combine honey buffalo sauce with ribs…so I’m glad I stumbled onto her delightful combination. I made a few adjustments to suit our tastes…but I give all the credit to Jen for these babies! You’re gonna want these in your life!
Hawaiian Haystacks have always been a favorite at this Nest. However, the other day I was craving Mexican and got to thinking…What if you changed out the steamed rice for Spanish rice…and involved salsa and avocados! Sounded like a FANTASTIC idea to me…and it was!!!
