Hasselback Pepperoni Pizza Sliders

A fun new way to make Pepperoni Pizza Sliders for Game Day, or any day! Soft Brioche Slider Rolls are sliced like a fan, stuffed with cheese and pepperoni, and brushed with a garlic and Italian Herbed Seasoned Butter then baked to ooey-gooey Perfection!

I’m so excited to share this recipe with y’all! I feel like I’ve re-invented the slider! (Not really, but I can live in my own little dream world right?!)

There are a lot of Pepperoni Pizza Sliders Recipes made on Hawaiian Rolls. I’m sure they’re tasty! You can’t go wrong with a pizza slider mini-sandwich!

What makes this recipe “stand-out” is the fact that they are made on a soft buttery Brioche Mini Bun and sliced like a Hasselback Potato. It makes for the perfect “pull-apart” pizza appetizer!

I can’t really take 100% of the credit for this recipe! My daughter sent me a video of a similar style pizza slider… and said “Hey Mom! We should make these!” Which for those of you without grown children…allow me to translate…really means… “Hey Mom…YOU should make these for ME!”. (Y’all know I’m preaching the truth!)

I decided to substitute a Brioche Bun in place of the original Hawaiian Rolls. I wanted something a little less sweet. It was the perfect match for the loads of melted Mozzarella Cheese and Sandwich sized Pepperoni! The savory herb and garlic butter kick these sliders up and over the goal post!

How To Make Pepperoni Pizza Sliders

There are only a few ingredients needed to create these quick and easy drool worthy Pepperoni Sliders.

Ingredients for Pepperoni Pull-Apart Sliders

  • 6 Brioche Slider Buns
  • 18 Slices of Large Sandwich Size Pepperoni (found in service deli)
  • 1 Cup shredded Mozzarella Cheese
  • 1/4 cup shredded Parmesan Cheese
  • 1/2 cup butter, melted
  • 2 cloves garlic, minced
  • 1/2 Tablespoon Italian Seasonings.
  • 1 – 2 cups of your Favorite bottled Marinara Sauce

Preheat oven to 400 °F degrees.

In a small sauce pan, over medium heat, melt 1/2 cup of butter. Add minced garlic and Italian Seasonings. Stir until combined. Remove from heat and set aside.

TIP: You don’t necessarily have to use all of this mixture, but I recommend using at least 3/4ths of the mixture.

Slice each Brioche Slider Bun into four equal slices, from the top to the bottom, without going all the way through the bottom of the bun. Stop about 1/4 of an inch from the bottom of the roll. Just like a Hasselback potato…only on a soft delectable Brioche Roll.

TIP: You can use Hawaiian Sweet Rolls in place of the Brioche Slider Buns, or any small soft dinner roll.

Place each bun in a large pie plate. Place one in the center of the pie plate and the other five around the edge of the pie plate.

TIP: You do not need to grease the pan! That garlic butter is going to take care of buttering the pie plate!

How To Stuff the Pepperoni Sliders

Each slider will require 3 slices of pepperoni. Fold two of the slices in half and then in half again to create a quarter wedge, and place in one of the slice openings on either side of the center of the slider roll.

Fold the last slice of pepperoni in half vertically and then cut it in half width wise. Place each half in the end slice openings.

Next up? Can you say “Cheese”?

That’s right! Time to get Cheesy. You may end up using more or less. It’s up to each persons individual taste. I’m a cheese lover. So I stuffed as much shredded mozzarella cheese in, and around the pepperoni, as I could. Push and tuck is what this step is all about!

Sprinkle the top of the sliders with 1/4 cup of Parmesan Cheese. This will add another depth of flavor to your Pizza sliders.

Time to grab that decadent garlic and herb butter!!

With a pastry, or basting brush, liberally brush, or dab, the top of each pizza slider. Dab, dab, dab… and brush, brush, brush till you’ve coated every inch of those stuffed buns! Remember to use at least three-fourths of the mixture.

Place baking dish with sliders in the center of the baking rack and bake for 10–12 minutes, or until cheese is melted, and slightly golden brown. Don’t they look Ah-mazing!!

Now comes the fun part…use a fork to carefully reach in and grab one slider. (They’re HOT! Like a menopausal woman! I highly recommend using a fork to serve yourself…at least until they cool down a tad. It also makes it easier to stab the person next to your trying to steal the one you want. Lol)

Gently pull the slider apart. It’s what makes this slider so Epic and Fun! That Hasselback Fan! Making it the perfect game day finger food!

I like serve them with individual cups of my favorite store bought Marinara sauce. A healthy dunk in that pool of sauce makes for the perfect bite! You can heat the sauce or serve it room temperature.

This is the perfect Pepperoni Slider! The buns are beautifully crispy around the edges, tender and buttery soft on the inside. The cheese is melty and gooey, the pepperoni sublime, and the seasoning are spot on!

I love how simple this recipe is, yet it delivers BIG flavor! It comes together in minutes, but will have all your guests swooning! It’s such a mouth-watering appetizer!

TIP: Make the sliders ahead of time, except for the garlic butter, and cover with plastic wrap and store in the refrigerator. Just before baking brush with the melted and bake as per the instructions. You could also reheat them in your Air Fryer!

  • 1/2 cup butter, melted

Instructions

  1. Preheat oven to 400°F.
  2. In a small sauce pan, over medium heat, melt 1/2 cup butter, with garlic and Italian Seasoning. Mix until well combined. Set aside.
  3. Slice each Brioche Roll into 4 equal vertical slices, from top to 1/4 inch from the bottom, keeping the roll intact. Do not cut all the way through the bottom of the roll.
  4. For each roll you will need three slices of pepperoni. Fold two in half and then in half again. Stuff each slice on either side slice of the center of the roll. For the two end slices, fold the last slice of pepperoni in half and then cut in half width wise, stuff one half into each of the end slices of the bun.
  5. Place each roll, stuffed with pepperoni in a large pie plate of 8 x 8 baking dish.
  6. Stuff a hefty pinch of shredded mozzarella cheese into each slice stuffed with pepperoni until all the Brioche buns have been stuffed with cheese. Sprinkle the top of the rolls with Parmesan Cheese.
  7. Using a pastry brush, stir the garlic herb butter to combine, and brush, or dab, the butter on top of each pepperoni stuffed bun. Use as much, or as little, as desired. I recommend using at least 3/4 of the mixture.
  8. Place in preheated oven and bake for 10-12 minutes until cheese is melted and lightly golden brown. Remove from oven. Serve with cups of marinara sauce for dipping.
