Best Easy Ground Beef Stroganoff

This easy simple Ground Beef Stroganoff comes together quickly with a rich flavor-filled hamburger gravy that is delicious when served over pasta or rice! A budget and family friendly meal!

It’s time for another edition of “Confessions of an Empty Nester”! (I know you’re super excited! Try to contain yourself. Lol.)

Years ago when our nest was full, I had 3-4 “go to” recipes when the budget was so tight we were counting pennies, couch diving for quarters, and the cupboards were so bare I wasn’t sure how I was going to feed our family of five!

We’ve all been there, some of us are there now with rising grocery costs! The point is… I get it! Been there, done that!

My personal favorite of my meager repertoire was this quick and Easy Ground Beef Stroganoff. It’s the best way to stretch a pound of hamburger meat! The rich creamy hamburger gravy with its tender fresh mushrooms, made with cream of mushroom soup, is generally served over egg noodles.

However, with the current shortages at our local markets…I couldn’t find egg noodles. So rotini it is! It’s what I could find in my local market. I think it’s a great representation on how we make things work during difficult times. We adjust! Women have been doing it for decades, and we’ll continue to do so! Because feeding our families warm home cooked meals brings comfort to us and to those we love.

How to Make Ground Beef Stroganoff

The list of ingredients for this recipe is really simple and most likely stuff you have on hand in your pantry! Here’s what you’ll need to make this family favorite!

List of Ingredients for Hamburger Stroganoff

  • 1 pound ground beef
  • 1 Tablespoon Olive Oil and 1 Tablespoon butter
  • 8 ounce package sliced white mushrooms (optional)
  • 1 cup sour cream
  • 1 (10.5 ounce) can Cream of Mushroom Soup
  • 1/2 cup Red Cooking Wine (optional, substitute beef broth)
  • 1/3 cup freshly chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1 Tablespoon dried Parsley, or 2 Tablespoons fresh chopped parsley
  • 1 lb. Rotini Pasta, or egg noodles, cooked per package instructions

Begin by boiling your water for the pasta.

Meanwhile, in a large skillet, over medium high heat, add 1 Tablespoon of Olive oil and 1 Tablespoon of butter. Add fresh mushrooms and chopped onions.

TIP: As the mushrooms are cooking I generally just chop at them to break them into smaller pieces, with my wooden spoon! (Makes it harder for the kids to pick them out! Just kidding! I happen to prefer smaller pieces of mushrooms in this dish! That’s all.)

Sautè mushrooms and onions until mushrooms begin to soften and onions turn translucent. Add 2 cloves of minced garlic, or 1 teaspoon of prepared minced garlic.

Add 1 pound ground beef. Brown ground beef with mushrooms, garlic, and onions. Cook until ground beef is no longer pink!

Add the Pasta to the boiling water while you finish up the ground beef gravy. Cook per the directions on the package.

Finishing the Hamburger Gravy for Stroganoff

Add salt, black pepper, garlic powder, onion powder, oregano, and dried parsley. Mix into beef and mushroom mixture.

Add 1 (10.5) can Cream of Mushroom Soup, 1 cup sour cream, and 1/2 cup of red cooking wine! (The wine goes into the gravy! Put the glass down!! This isn’t for you!) Remember you can substitute the cooking wine with beef broth. I love the additional flavor the cooking wine adds to this dish. However, you do what works best for your crew!

Reduce heat to medium. Stir mixture together over medium heat until well combined. Turn heat down to low and simmer for 5 minutes to allow the flavors to incorporate. Stir occasionally.

Finishing up Ground Beef Stroganoff

Your pasta should be “al dente”. Drain pasta. Pour the rich savory Ground Beef gravy into the pasta, stir to combine.

TIP: I just add the gravy into the pot with the drained pasta! I’m all about keeping it simple and not doing more dishes!

Once you’ve combined the pasta and the beef gravy, transfer mixture to a serving dish, and top it off with a little more parsley for a pretty presentation. Cause you know how much teenagers appreciate that! (Insert heavy eye rolling!)

I love to serve this simple dish with a big garden salad and my Cheesy Garlic Bread for a complete meal that my family absolutely loves.

Being able to prepare this classic dish has always brought such joy to my Momma heart. I knew that even if the cupboards were a little bare, and the bank account a tad low (maybe more than a tad) there was a hot meal that would fill their bellies!

Isn’t that why we go to the effort to prepare a homemade meal? Our love for those we love! I know it’s always brought me great satisfaction.

  • 1 cup sour cream
  • 1/2 cup red cooking wine (optional, substitute with beef broth)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 1/3 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large skillet over medium-high heat, with 1 Tablespoon Olive Oil and 1 Tablespoon butter, add sliced mushroom and onions. Saute until mushrooms are tender and onions translucent. Add garlic. Saute for 1 minute.
  2. Add ground beef to mushrooms mixture. Cook until ground beef is brown and no longer pink. Drain beef mixture if necessary. Add spices and seasonings.
  3. Reduce heat to medium. Add canned soup, sour cream, cooking wine, or broth. Stir and continue to cook over medium heat until well combined. Reduce heat to low, allow mixture to simmer for 5 minutes until flavors combine.
  4. Add ground beef gravy to prepared pasta. Stir to combine. Serve.

Notes

Ground Beef Gravy can also be served over steamed rice.

Just reread the recipe….I also add 1/2 teaspoon black pepper.

My husband doesn’t like meat cooked with wine (I don’t get it), so I use the beef broth, however I also add two teaspoons of Worcestershire sauce. He puts it over mashed potatoes, I have either rice or noodles and always a lettuce and tomato salad.
