What’s better than that dish? To take similar ingredients and make them into a wonderful comforting casserole!

A bed of creamy cheese hash brown potatoes provides the perfect nesting place for the scrumptious ground beef meatballs in this casserole! The combination is a heartwarming and filling dinner. I love the ease, and flavors, of this dish. Your family will too!

How To Make Cheesy Meatball Hash Brown Casserole

Let’s start with what you’re going to need to make this casserole. There are two parts to this dish. Each simple and easy to make. Most ingredients will be in your pantry.

Ingredients you’ll need for this Hash Brown Bake

  • 2 eggs
  • 3/4 cup bread crumbs
  • 1/4 C Parmesan Cheese, grated
  • 6 to 8 garlic cloves, minced
  • 2 teaspoons salt, divided
  • 1½ teaspoons pepper, divided
  • 1 Tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • 1 pound ground beef
  • 1 can (10-¾ ounce) condensed cream of chicken soup, undiluted
  • 1 C (8 ounces) sour cream
  • 1 C (4 ounces) shredded cheddar cheese
  • ½ a large onion, chopped
  • ½ teaspoon garlic powder
  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed.

How To Make Tender Meatballs

In a bowl, lightly beat the eggs. Add the bread crumbs, garlic, 1 teaspoon of salt and 1/2 teaspoon pepper, Parmesan Cheese, onion powder and Worcestershire sauce.

Crumble beef over bread crumb mixture and mix well.

TIP: You can mix with a wooden spoon or use the hands the good Lord gave you for mixing meatballs! (Bet you didn’t know that’s why you have hands!)

Grab a hearty pinch of the meat mixture and shape into 1-inch balls. Place the meatballs onto a baking sheet or plate until ready to cook.

Place meatballs in a large covered skillet over low heat, cook meatballs in a small amount of water until browned. Turn meatballs during cooking.

TIP: You are just “browning” the meatballs. It will be okay if they are still pink in the center as you will be baking them in the casserole.

I highly recommend watching the meatballs and not walking off. Mine got a tad too dark! (I decided to multitask and change the laundry during cooking. Don’t do that! The laundry can wait… like it always does.)

Turn off the heat and drain. Set aside while you make the cheesy potatoes!

How To Make Cheesy Hash Browns

In a large bowl, add thawed hash browns, combine soup, sour cream, cheese, onions, garlic powder, remaining salt, and pepper.

Stir mixture to create the potato base for the casserole.

Transfer to greased 13-in. x 9-in. x 2-in. baking dish. Spread with spatula until evenly distributed in the baking dish.

Arrange meatballs over top, pressing lightly into potato mixture.

TIP: Four meatballs across is perfect! These meatballs are so tender and juicy…even after baking!

Baking Meatball Hash Brown Bake

Cover the casserole dish with aluminum foil and bake at 350° for 45 minutes. Carefully uncover; sprinkle with cheese and top with freshly chopped chives (optional). Bake an additional 15 minutes longer, or until meat is no longer pink, potatoes are tender, and cheese is melted and slightly brown.

This casserole is a crowd pleaser. It combines two favorites…a meat dish with a tasty potato side dish!

I serve this casserole with a big garden salad and fresh green beans! Mr. Nest gave this dish two hearty thumbs up! My grandkids gobbled it up! It’s a food hug from the inside out! You can’t ask for much more out of a casserole!

  • 1 Tablespoon Worchestershire sauce
  • 1/2 teaspoon onion powder
  • 1 pound lean ground beef
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 cup (8 ounces) sour cream
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 a large onion, chopped
  • 1/2 teaspoon garlic powder
  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed

Instructions

  1. In a bowl, lightly beat the eggs. Stir in the bread crumbs, 1/4 cup Parmesan Cheese, garlic, 1 teaspoon salt, worchestershire sauce, onion powder, and pepper. Crumble beef over mixture and mix well. Shape into 1-in. balls.
  2. In a covered skillet over low heat, cook meatballs in a small amount of water until browned; drain. In a bowl, combine soup, sour cream, cheese, onion, garlic powder, and remaining salt and pepper. Add hash browns. Mix until combined.
  3. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Arrange meatballs over top, pressing lightly into mixture. Cover and bake at 350° for 45 minutes. Uncover; sprinkle with extra cheese and chopped chives. Bake 15 minutes longer or until meat is no longer pink and potatoes are tender.

Hi Diane! I'm sure it could be, I have never tried it. I would suggest doing it on low for 4-5 hours. I wouldn't go longer than that, because you don't want mushy potatoes. Hope this helps a bit.
