It’s Disney Week here on the blog! A few weeks ago we went to Disneyland with our kids and grandkids. Even though Alan and I both grew-up in California, and went to Disneyland often, we hadn’t been in almost 16 years!

We had SO much fun! The weather was perfect, the lines minimal, and we did our best to eat our way through the parks! (It was truly the happiest place on earth…so many good eats!)

Alan and I had never been to California Adventure (That’s how long it had been since we had gone!). It was hot the day we went, and we all needed a lunch break. Not being familiar with all the different food options available…we turned to our trusty phones and the Disney App to locate different dinning places.

Up popped the “Pacific Wharf Café”! They serve fresh hot Boudin sour dough bread bowls filled with chowders and a “Classic Deli Sandwich”! My inner Godzilla was already beginning to peek through thanks to the heat and humidity…and the 20 million steps I’d taken over the last 48 hours…so hot soup didn’t sound appealing.

We decided to try the “Classic Italian Deli Sandwich”. I didn’t have great expectations! It was a sandwich after all. Oops! Boy was I wrong!

This is not your everyday-run-of-the-mill deli sandwich. Holy Amazing Cold Cuts! We talked about this sandwich for days! I knew I had to recreate this sandwich as soon as I got home. (Below is a photo of Disney’s version)

The soft fresh sour dough bread (which is key…the bread needs to be soft), delicious lunch meats, provolone cheese, ripe red tomatoes, arugula and red onions are a great foundation for this sandwich.

However, what sets this sandwich apart from your typical Classic Deli sandwich is the Italian Herbed mayo and the red wine vinegar on the arugula.

I’m not allowed to divulge how many of these I’ve personally eaten, but let’s just say, this sandwich has been thoroughly taste tested.

How To Make A Classic Deli Sandwich

Here’s what you’ll need to make 4 Italian Sandwich

  • .5 lbs sliced Sandwich Pepperoni
  • .5 lbs sliced Sandwich Hard Salami
  • 6 (oz.) package Del Duca Prosciutto
  • 1 (7.6 oz.) package ultra-thin sliced Provolone
  • 8 slices of soft sour dough bread
  • 1 package baby Arugula, washed and dried
  • 1 large tomato, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1/2 cup Mayonnaise
  • 1 teaspoon Italian Seasoning
  • 1/2 Tablespoon Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt and fresh ground pepper to taste
  • 1/4 teaspoon brown spicy mustard

Gather all your ingredients beforehand. This will make assembling the sandwiches is a breeze!

How to make Herbed Mayonnaise

There are two steps that absolutely can’t be skipped. One is making the Herbed mayonnaise. The other, the red wine vinegar dressing for the arugula. Let’s start with the Mayo!

You can make this right before making the sandwiches…however if you can make it earlier in the day I recommend it.

In a small bowl, add 1 cup mayonnaise with Italian seasonings.

Mix the two ingredients until well combined. This can be made days beforehand and stored in an airtight container in your refrigerator. The longer it sits, the more enhanced the flavors.

How to Make Red Wine Vinegar Dressing

In a small bowl combine 1/2 Tablespoon of olive oil and 2 tablespoons red wine vinegar. Add sugar, salt, pepper, and brown spicy mustard. Whisk together and set aside.

On one slice, of each sandwich, add 2–3 slices of Prosciutto. I trim off a little bit of the extra fat around the edge. You can choose to leave it on. It’s really all about personal preference.

Next add a layer of Hard Salami. I use the larger “sandwich” slices. You can do one or two layers. I made this sandwich “meaty” for my man! My guy can’t stand sandwiches with one slice of paper thin meat.

Up next…sliced sandwich pepperoni. This sandwich is layer upon layer of flavor!

Add a layer of thinly sliced provolone and thinly sliced tomatoes. I like a good sprinkle of coarse pepper on top of the tomatoes. Flavor baby! It’s all about the Flavor.

Add sliced red onions, if desired. They are totally optional. I realize not everyone is a fan.

Place several large handfuls of baby arugula in a small bowl. Drizzle with a tablespoon of Red Wine Vinegar dressing. Toss to coat arugula.

Add coated arugula to the top of the lunch meat and cheese.

Arugula has a peppery nutty flavor that is amazing!

Place the top slice of sour dough bread on top…and gently press down. You can use sandwich picks to hold the sandwich together while you slice it.

We could enter into the great “how to slice a sandwich” debate. Should we? Naw! Everyone knows it’s diagonal!

Serve this sandwich with my scrumptious Slow Cooker Potato Cheese Soup! The perfect pairing to turn this meal into a great easy dinner!

I can’t recommend this sandwich enough. The best part we can have it at home…but have no fear…we’ll find other reasons to go back to the Happiest Place on Earth! (Which I thought was my kitchen? It is, isn’t it?)

Ingredients

  • .5 lbs sliced Sandwich Pepperoni
  • .5 lbs sliced Sandwich Hard Salami
  • 6 (oz.) package Del Duca Prosciutto

Instructions

  1. In a small bowl combine Mayonnaise and Italian Seasoning. Mix until combined.
  2. In a separate small bowl combine olive oil, red wine vinegar, sugar, salt, pepper, and spicy mustard. Whisk until well blended.
  3. Spread mayonnaise on the inside of each slice of bread. On the bottom slice of each slice of bread begin layering lunch meats. Begin with Prosciutto, Salami, Pepperoni, Provolone, Onion (optional), and tomatoes.
  4. Sprinkle coarse black pepper over tomatoes. In a small bowl add Arugula and drizzle with 1 Tablespoon of vinegar dressing. Toss to coat. Save extra dressing for dipping if desired.
  5. Place arugula with dressing on top of sliced tomato. Add top slice of sour dough on top of the arugula and gently press down. Cut sandwich in half and serve immediately.
