Sausage Breakfast Uncrustables

Hey there, breakfast adventurers! (Yes, it’s a club!) Feast your eyes on the ultimate morning marvel: the Sausage Breakfast Uncrustable Sandwich! It’s a breakfast dream come true, ready to make your taste buds dance with every bite!

The best thing about these handheld breakfast biscuits is how easy they are to make. Your kids can help you put them together. The bonus… as any Mom will tell you, kids eat better when it’s something they have helped make!

Today, I’m sharing a breakfast version of these stuffed biscuits. However, with just a few ingredients, you can get creative and make them into lunch biscuits, by stuffing them with ham and cheese, or pepperoni and cheese. Serve them with a side of pizza sauce, and you have a kid-friendly meal in minutes!

  • 8-Pillsbury Grand Homestyle Biscuits
  • 2-Frozen Precooked Sausage Patties, cut into quarters. I purchased mine from Walmart. Any brand will work.
  • 2 slices Colby Jack Cheese, cut into quarters
  • 2 slices Pepper Jack Cheese, cut into quarters
  • 2 Tablespoons melted butter
  • 1 Tablespoon Everything Bagel Seasoning (Optional)

Preheat oven to 375°(F). Line a baking sheet with parchment paper, or a silicone baking sheet, and set aside.

Split the biscuits in two. Simply insert your thumb halfway into the side of the biscuit and pull it apart. Using your fingers, slightly flatten and stretch each half of the biscuit dough. Just to make the dough discs a tiny bit larger.

On the bottom half of each biscuit, layer with one slice of either Pepper Jack or Colby cheese. Place one quarter of the sausage patty on top of the cheese and lay another slice on top.

TIP: You can use all Colby jack if you’re not a fan of spice. Vice Versa also applies. You can use Pepper Jack cheese without using Colby jack. You can use American Cheese as well. It’s really about your personal tastes and preferences. You can also double all the cheese in this recipe if you are a cheese lover like myself.

Once you have all the ingredients layered on the bottom of the biscuit, place the other half of the biscuit on top. Gently pull the biscuit dough over the cheese and sausage, and pinch the edges closed.

Place the stuffed biscuit on the parchment-lined baking sheet.

In a microwave-safe bowl, melt 2 tablespoons of butter. Brush the top of each biscuit with melted butter and sprinkle with everything bagel seasoning.

TIP: I like to do half with seasoning and half without for those “picky” eaters at this nest! You may be blessed and not have this issue at yours? Personally, the seasoning is absolutely AMAZING on these little hand-held delights!

Place the prepared biscuits in the preheated oven and bake for 12–15 minutes until the tops are golden brown.

TIP: You’ll notice some of the cheese slipped out during baking. To prevent this, you can “crimp” the edges of your biscuits with a fork. It will solve the problem. I don’t mind a little melted cheese escaping its confines. It reminds me of “muffin tops” escaping spanks. (Que George Michaels “Freedom”!)

Pop ’em in the oven, air fryer, or freezer for later—either way, you’re winning the breakfast game! They are perfect for the summer months when all the kiddos are home from school, and you’re looking for a quick “on-the-go” breakfast.

TIP: Want to “sweeten” things up a bit? Just stuff them with sausage, sprinkle the tops with cinnamon sugar and serve with warm maple syrup! You can even stuff them with scrambled eggs. The possibilities are endless.

Ingredients
  

  • 2 Sausage Patties, Frozen, Pre-cooked, Cut into fourths
  • 2 Slices, Colby Jack Cheese, Cut into fourths
  • 2 Slices, Pepper Jack Cheese, Cut into fourths
  • 2 Tablespoons Butter, melted
  • 1 Tablespoons Everything Bagel Seasoning

Instructions
 

  • Preheat oven to 375° (F). Line a large baking sheet with parchment paper or a silicone baking sheet. Set aside.
  • Separate each biscuit into two halves. Gently flatten the dough out slightly. On the bottom half of each biscuit, layer one-quarter slice of Colby cheese, one-quarter of a sausage patty, and one-quarter of pepper jack cheese on top.
  • Place the top on each biscuit, gently pulling the dough over the top of the fillings and pressing the top half into the bottom half by pinching the edges as you go around each biscuit.
  • Place the stuffed biscuits on the prepared baking sheet pan. Brush the top of each biscuit with melted butter and sprinkle with everything bagel seasoning (Optional).
  • Place in preheated oven and bake for 12–15 minutes until the tops are golden brown. Remove from oven. Cool slightly and serve. Store any leftovers in a Ziploc bag in the refrigerator. Reheat them in the microwave for 30 seconds on high.
