Mini S’mores Chocolate Chip Cookie Pies

I’m not a huge “S’mores” fan in the traditional sense. However, these mini S’more pies have me repeatedly swooning. It’s a viral recipe that instantly caught my attention!

Melty chocolate, gooey marshmallows, and a delicious golden chocolate chip cookie tucked into a pre-made graham cracker crust come together to create a dessert that is truly unforgettable!

S’mores Cookie Pies take everything you love about those classic campfire treats and give them a cozy, oven-baked twist that you can enjoy any time of year, no fire pit required.

What makes these little pies a must-try is how super easy they are to make. They’re simple enough to whip up for a weeknight treat, but special enough to serve when you want to wow family and friends. If you’re looking for a dessert that feels both playful and downright delicious, this one is sure to earn a permanent spot in your recipe box.

  • 1 (16.5 ounce) Nestle Refrigerator Chocolate Chip Cookie Dough (Tube or individual dough discs) I used homemade cookie dough, but store-bought works just as well.
  • 1 (4.0 ounce) 6 pack of Keebler Mini Graham Cracker pie crusts.
  • 1 (3.5 oz.) Cadbury Milk Chocolate Bar or Caramello Bar, or milk chocolate bar of your choice.
  • 1½ cups mini marshmallows

Step 1 — Preheat the oven to 350°(F).

Step 2 — Place each mini graham cracker pie crust onto a baking sheet.

Step 3 — Break the candy bar of your choice into smaller pieces and place 2–3 pieces in the bottom of each pie shell. Top with 6–8 mini marshmallows.

TIP: The chocolate and marshmallows just need to fill the pie shell, the order doesn’t really matter.

Step 4 — Divide cookie dough in half. Save one half for later when a cookie craving hits, or double this recipe and use all of it.

The other half is divided into 6 equal balls. Flatten each cookie dough ball between your hands to make a circle big enough to almost cover the mini pie. Place the dough over the shell, gently shaping it over the filling.

TIP: It doesn’t have to completely cover the edges of the crust. As long as the pie filling of marshmallows and chocolate is covered.

Step 5 — Place the pies on the baking sheet into your preheated oven and bake for 10–12 minutes until the cookie is golden brown. Carefully remove from the oven and allow the pies to cool for a few minutes before serving.

TIPS for Baking in an Air Fryer: If baking mini pies in the air fryer, be sure to preheat the air fryer to 350°. Place 2–3 mini pies in your air fryer and bake 5–7 minutes until the cookie is golden brown. Carefully remove from the air fryer basket and allow the pies to cool for a few minutes before serving. Repeat with the remaining pie shells.

Getting that perfectly gooey marshmallow and irresistibly melty chocolate center is what truly makes these S’mores Cookie Pies shine. The good news? It’s easy to achieve with just a few simple tips and a little timing.

I can’t stress enough how AMAZING these little pies are! I’ve taste-tested them several times to be sure they really are as special as I thought! (It was a sacrifice I was willing to make for y’all! Lol) Remember I’m not normally a huge S’mores lover.
