Pizza Stuffed Biscuits

If your crew loves pizza night, but you’re short on time (or energy, and aren’t we all!), these Pizza Stuffed Biscuits are about to become your new best friend!

With just a few simple ingredients…refrigerated biscuits, pepperoni, cheese, and pizza sauce, you can whip up this fun, finger-friendly twist on classic pizza in no time. The kids can even help make these fun pizza pockets! My grandkids love making them with me.

They’re perfect for little hands and big appetites alike, and trust me, they’ll disappear faster than you can say, “Who wants seconds?”

  • 1 package (16.3 ounces) Pillsbury Grand Biscuits — 8 count
  • 24 pepperoni
  • 2 cups grated Mozzarella cheese
  • ¼ cup Parmesan Cheese
  • ¼ cup butter, melted
  • 2 teaspoons garlic salt or garlic powder
  • 2 cups Pizza Sauce or Spaghetti Sauce

Each fluffy refrigerated biscuit is filled with gooey melted cheese, zesty pepperoni, and a spoonful of your favorite pizza sauce. They come together quickly and are ready to eat in minutes!

Preheat your oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat.

Begin by scaring the bejesus out of yourself and cracking open that can of exploding refrigerator biscuits! (Honestly, they get me every time. Even when I know it’s coming!)

Separate each biscuit equally in half. I recommend just carefully pulling each biscuit apart as close to “half” as you can.

Using your hand, or a rolling pan, flatten each half by gently pulling and patting each biscuit a little bit larger than its original size. This allows you to get more toppings inside each biscuit.

Place each biscuit bottom on the parchment-lined baking sheet.

On the bottom half of each biscuit, place 2 -3 tablespoons of grated mozzarella cheese and three slices of pepperoni. Repeat with the remaining biscuits.

Place the other half on top of each biscuit and the toppings. Using a fork, crimp all around the edges to seal the fillings inside each biscuit.

Using the same fork, poke the top of each biscuit two times to allow the steam to escape during baking.

Place the top of each biscuit on top of the toppings and crimp each edge.

Bake in a preheated 375°F oven for 12–15 minutes until golden brown.

While the pizzas are baking, in a small microwave-safe bowl, melt the butter and add the garlic salt, stir to combine.

Tip: I like to use Lawry’s Garlic Salt. I love the addition of dried parsley and herbs. You can use garlic powder instead. I love the additional flavor of the salt.

Brush the top of each baked biscuit pizza pocket with the garlic butter. Sprinkle with grated Parmesan cheese.

TIP: For this recipe I used the traditional green shaker style of Parmesan cheese. It works great for creating a flavorful topping!

Serve with a side of warm, or cold, pizza sauce. I like it warm, but everyone has different tastes. Like I always say, you do you!

Pizza Stuffed Biscuits

Ingredients
  

  • 1 16.3 ounce can Pillsbury Grand Biscuits
  • 24 slices pepperoni
  • 2 cups Mozzarella cheese grated
  • ¼ cup butter melted
  • 2 Teaspoons garlic salt
  • ¼ cup Parmesan Cheese, grated
  • 2 cups Pizza sauce

Instructions
 

  • Preheat oven to 375°F. Line a large baking sheet with parchment paper.
  • Separate each biscuit into two equal halves. Flatten each biscuit half with the palm of your hand, or using a rolling pin. Place each biscuit bottom half on the prepared baking sheet. On the bottom of half of each biscuit, place 2–3 tablespoons of grated cheese. On top of the cheese, place 3 slices of pepperoni per biscuit pizza.
  • Cover each biscuit with the other half of the dough. Using a fork, crimp all around the edge of each biscuit. Poke the top of each pizza twice with the fork to create holes for the steam to escape.
  • Bake for 12–15 minutes, or until golden brown, in the preheated oven. While the pizza biscuits are baking, melt the butter and add the garlic salt. Stir to combine.
  • Remove baked pizza biscuits from the oven. Using a pastry brush, brush the melted garlic butter on top of each biscuit. Sprinkle with Parmesan cheese. Serve with warmed pizza sauce. Store any leftovers in a Ziploc bag in the refrigerator for up to 3 days. Reheat in the microwave.
