Pumpkin Ginger Streusel Muffins

There’s just something about Fall that makes me want to bake ALL the pumpkin things! I know not everyone is a “Pumpkin Spice” lover, but I can’t imagine Fall without the smell of Pumpkin goodies baking in my kitchen.

These Pumpkin Muffins are the perfect little taste of the season…tender, moist, and warmly spiced. What really makes them unique is their buttery Ginger Cookie and Pecan Streusel topping.

It’s like your favorite pumpkin muffin and a crunchy ginger cookie decided to get together and have a Fall party! Whether you’re enjoying one with your morning herbal tea, packing them into a lunchbox, or sneaking one straight from the cooling rack (no judgment here!), these muffins are everything I love about cozy Fall baking.

  • All-Purpose Flour
  • Brown Sugar
  • Baking Soda
  • Pumpkin Pie Spice
  • Salt
  • Buttermilk
  • Vegetable Oil
  • Egg
  • Crushed Gingersnaps
  • Butter
  • Chopped Pecans
Ingredients for Pumpkin Streusel Muffins.

Preheat oven to 350°F. Place a paper baking cup in each of the 12 regular-size muffin cups; spray baking cups with cooking spray. If you are using “parchment style” muffin cups, you do NOT need to spray them. Set aside as you prepare the muffin batter.

In a large bowl, mix the flour, brown sugar, the baking soda, pumpkin pie spice, and salt with a wire whisk to combine.

Add pumpkin, buttermilk, oil, and egg.

Mix until the dry ingredients are just moistened. I love the rich colors in a delicious pumpkin muffin batter, don’t you?!

TIP: Don’t overmix the batter. Mix just until flour streaks disappear.

Divide batter evenly among muffin cups. I like to use a large cookie scoop to make it easy to fill each muffin cup.

PRO TIP: If using a “parchment” muffin cup, you do not need to spray each muffin paper with cooking spray. I love to use high muffin paper liners when making a streusel-topped muffin. It helps hold everything together.

Place the gingersnap cookies, about 13 of them, in a large ziplock bag, and crush them with a rolling pin. They do not need to be a “fine crumb”, but should at least be a “pea-sized” chunky crumb.

In a small bowl, mix the crushed ginger snaps, 3 tablespoons of flour, 3 tablespoons of brown sugar, one-third cup chopped pecans, and the butter with a fork until crumbly.

TIP: If you’re struggling to combine the streusel toppings, dip your fingers in flour and quickly crumble the mixture using your hands.

Using a spoon, sprinkle the streusel topping evenly over the batter in each cup. Don’t be shy with that streusel…it is the joy of this recipe! Who would have ever thought crushing up a ginger cookie would elevate a pumpkin muffin to such heights!

Place the muffin tin on the center rack of the preheated oven. Bake for 22–24 minutes until a toothpick inserted in the center comes out clean, or when lightly pressed in the center, the muffin springs back.

Remove the muffins from the pan to a cooling rack. Once cool, you can sprinkle the tops with powdered sugar if desired. It is totally optional.

The secret to tender, moist muffins is to avoid overmixing the batter. Stir the wet and dry ingredients together just until you don’t see streaks of flour. A few little lumps are perfectly fine! Overmixing develops the gluten in the flour and can leave you with muffins that are tough instead of tender. So, when it comes to muffins, a gentle hand is your best friend!

Serve them alongside a cozy mug of apple cider.

They also make a wonderful addition to a holiday breakfast table, afternoon snack, or a sweet little treat for the kids after school. I’ve also found they make a great “closet snack” when hiding from your children! (I’m full of helpful tips)

Store completely cooled muffins in an airtight container at room temperature for up to 3 days. If you’d like to keep them a little longer, pop them in the refrigerator for up to 5 days. Just remember that refrigeration can make muffins lose a little of their tender texture.

For longer storage, these muffins freeze beautifully! I always recommend wrapping them separately and then placing them in a freezer-safe bag or airtight container. Freeze for up to 3 months.

To “reheat” them after freezing, thaw them at room temperature, or warm individual muffins in the microwave for about 15–20 seconds. That little bit of warmth brings back all those cozy pumpkin-and-spice flavors, and makes them taste like they just came out of the oven!

One of the best things about pumpkin muffins is how easy they are to dress up! This recipe is delicious just as written, but if you’re feeling a little creative, and you know I always encourage creativity with my recipes, here are a few fun ways to make them your own.

  • Chocolate Chips: Add ½–1 cup of semi-sweet, milk, or white chocolate chips to the batter. Pumpkin and chocolate are a match made in Fall heaven! I’m drooling just thinking about it!
  • More Nuts: Swap the pecans for walnuts, or sprinkle a handful of sliced almonds directly on top of the streusel topping for extra crunch.
  • Maple Twist: Add a teaspoon of maple extract to the batter for a lovely maple-pumpkin flavor.
  • Cranberry Pumpkin: Stir in ½ cup of dried cranberries, or even a few fresh cranberries, for a little tartness and a beautiful pop of color.
  • Ginger Lover: If you adore that spicy ginger flavor, add a little extra ground ginger to the muffin batter.
  • Sweet and Salty: Sprinkle a tiny pinch of flaky sea salt over the streusel before baking. That sweet-and-salty combination is downright irresistible!

And if you ask me, there’s no such thing as too much streusel. So go ahead and double it, and pile it high! These are Fall muffins, and we’re allowed to have a little fun!
