Ingredient List

  • 2 cups Bisquick®
  • 2/3 cup milk
  • 2 tablespoons white sugar
  • 1 egg
  • ¼ teaspoons ground cinnamon

How To Make Cinnamon Streusel-topped Coffee Cake

Preheat the oven to 375° (F). Grease, or spray, an 8-inch square baking dish, or an 8-inch round pan, with non-stick baking spray.

TIP: You can also use a 9-inch pie plate that is at least 1½ – 2 inch deep.

In a large bowl, combine 2 cups original Bisquick, 2 Tablespoons white sugar, 2/3 cup milk, and 1 egg.

Add Cinnamon and mix until well combined with a wooden spoon or spatula.

I love that this cake has hints of cinnamon in the moist cake layer. It’s also so nice to make a cake that doesn’t require your big stand mixer. All you need is a little elbow grease to mix this batter.

Pour coffee cake batter into the prepared greased cake or pie plate. Spread the batter evenly.

How To Make Cinnamon Streusel Topping

In a separate bowl combine the streusel ingredients. This is a yummy crispy brown sugar crumb topping.

Mix together the Bisquick baking mix, brown sugar, cinnamon, and butter with a fork, or pastry blender.

You’ll know it’s done once you get a crumbly textured mixture, like the one in the below photo. This is the topping for your moist Bisquick Coffee Cake.

Sprinkle the brown sugar streusel topping, evenly, over the top of the Coffee cake batter.

TIP: You can really kick up this coffee cake by dividing the batter in half. Pour one-half of the cake batter into your pan, then sprinkle half of the streusel mixture over the top of the cake. Pour the remaining batter over the streusel topping, top with the remaining streusel mixture. Follow the same baking steps mentioned below. This will create a beautiful ribbon of cinnamon throughout the coffee cake.

Baking and Serving Easy Coffee Cake Recipe

Bake in preheated oven for 20–22 minutes. Be careful not to over bake this cake, or it will turn out dry! You’ll be coughing up dry crumbs for days! Not really…but no one likes a dry cake!

Gently press the center of the cake. If it springs back slightly, it is ready.

The top should be golden brown and crispy! Isn’t it pretty?!! It smells heavenly! It would make an amazing air freshener for Fall.

Allow the cake to cool slightly before cutting into 9 equal squares.

This delicious cake is the perfect breakfast food! Serve with a small bowl of fresh fruit, or garnish with fruit and whipped topping if desired. All you need now is a steaming cup of your favorite warm beverage and a friend to visit with!

  • Why is it called Coffee Cake? Mainly because they were created to be served with a cup of steaming hot coffee! Perfect for an afternoon break. However, they go well with your favorite herbal tea, hot cocoa, or a nice tall glass of milk.
  • What is the difference between a regular dessert cake and a coffee cake? Coffee cakes generally do not have frosting. Instead, they have a crumb topping. I love a good crumb topping!
  • Why is my coffee cake tough? Generally it is because the cake batter has been over mixed. Be careful not to over mix a coffee cake batter. The rule of thumb is to mix just until combined. It’s okay if there are still a few little lumps! (Just like me…a little lumpy! Lol)
  • What is the best way to store coffee cake? It’s best to cover the coffee cake with plastic wrap, or to store it in an airtight container, at room temperature. I never recommend storing cake in the refrigerator unless it has a whipped cream or cream cheese frosting. It can dry the cake out.
  • Can I freeze this coffee cake? Yes! The best way to freeze this cake is to wrap each piece individually in plastic wrap, then store in a Gallon Freezer Bag. Pull one out a time to thaw and eat. They can be stored up to 3 months in the freezer.
