Discover a simple, mouthwatering ham and noodle casserole that’s perfect for a comforting weeknight dinner or a hearty family meal.

Why This Ham And Noodle Casserole Is Perfect For Weeknight Dinners
Hi Friends! I’ve been trying to come up with a new way to use up leftover ham after a big Holiday meal! This is it! The perfect creamy casserole, especially on a busy weeknight when time and energy are in short supply. (Which seems to always be the case at this nest!)
This Ham and Noodle Casserole checks all the right boxes. It’s hearty, satisfying, and made with simple, familiar ingredients you likely already have on hand in your pantry. Tender macaroni, savory chunks of ham, and a rich, creamy Swiss cheese sauce come together in one cozy dish that feels like a giant comfy hug at the end of a long day.
This dish comes together in just a few minutes. Whether you’re using leftover ham from a holiday meal or picking up a quick ham steak from the store, this casserole transforms it into something new and delicious. It’s a budget and family-friendly option that can be prepped ahead, baked in one dish, and served with minimal fuss. My kind of dish! I know you’re going to love this easy casserole! So grab your apron and let’s get cooking!
Ingredients Needed For The Casserole
- 3 cups of uncooked elbow macaroni noodles, you can substitute them with 4 cups of egg noodles.
- 2 cups of diced cooked ham
- 2 cups of shredded Swiss Cheese
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup onion, finely chopped
- ½ cup sour cream
- ¼ teaspoon garlic powder
- 1 Tablespoon dried parsley (optional)
- Salt and pepper to taste
- ¼ cup whole milk
- ¼ cup dried bread crumbs
- 1 Tablespoon butter, melted

Step-By-Step Preparation Instructions
Step 1 — Gather all your ingredients. Preheat the oven to 350° (F). Grease a 9×13 casserole dish, or a 2-quart casserole dish. Either works beautifully.
Step 2 – Fill a large pot with lightly salted water and bring to a rapid boil.
Cook the elbow macaroni in the boiling water for 5 minutes, stirring occasionally. Remove from the heat, cover, and let stand until tender, about 10 minutes. Drain.
TIP: You can use any type of pasta in this dish. The original recipe calls for 4 cups of Egg Noodles. I didn’t have enough egg noodles and, personally, I prefer elbow macaroni, so that is what I used. For smaller, heavier pastas, use only 3 cups uncooked pasta.

Step 3 – Transfer the noodles back into the large pot or use a large bowl. I’m all about not having more dirty dishes than necessary.
Add condensed soup, onion, garlic powder, sour cream, and milk. Season with salt and pepper to taste. Stir until well combined.

Add Ham and Swiss cheese. Stir to combine.

At this point, if you’re going to add the parsley…this is the time. Please note that the addition of either dried or fresh parsley is totally optional.
This is also a great time to add any veggies you might want to add. Be creative friends. You know that’s my motto. Always tweak a recipe to meet your family’s individual tastes and needs.

Step 4 — Spoon the mixture into the prepared casserole dish.

In a small bowl, combine breadcrumbs and butter. Sprinkle the buttery breadcrumbs over the top of the casserole.

Step 5 – Bake in a preheated oven, uncovered, until the casserole is bubbling, and breadcrumbs are golden brown, about 35–40 minutes. Remove from the oven, let set for 5–10 minutes and serve.

Tips For Making The Casserole Extra Delicious
A few simple tricks can take this Ham and Noodle Casserole from good to absolutely irresistible. An extra pinch of onion powder, or even a little Dijon mustard can deepen the flavor without adding extra work.
Let’s talk pasta! For the creamiest texture, avoid overcooking your noodles before baking. Slightly undercook them so they finish perfectly in the oven without turning mushy. If your sauce feels a bit thick, stir in another splash of milk or broth to keep everything silky and smooth as it bakes.
Cheese makes a big difference, too. Instead of using only one type, try a blend—sharp cheddar or Pepper Jack for flavor and something melty like mozzarella or Monterey Jack for that gooey, irresistible pull.
This is a very versatile dish. Get creative by adding spinach, broccoli, garden peas, or even frozen mixed vegetables for an additional pop of color and flavor.
Finally, let the casserole rest for 5–10 minutes after baking. It might be tempting to dig right in, but that short pause helps everything set up, making each serving hold together beautifully while staying warm and comforting.

Variations And Substitutions For Dietary Preferences
This Ham and Noodle Casserole is easy to adapt for a variety of dietary needs without sacrificing flavor.
For a lighter option, swap in reduced-fat cheese products, low-fat soups, or use Greek yogurt in place of the sour cream.
If you’re looking to make it gluten-free, simply use your favorite gluten-free pasta and a certified gluten-free soup or sauce base.
For a lower-sodium version, choose a reduced-sodium ham, reduced-sodium condensed soup, and be mindful of added seasonings.
As mentioned above, you can also boost the nutritional value by adding vegetables like peas, broccoli, or spinach, or substitute the ham with cooked chicken or turkey for a different twist that still keeps things hearty and satisfying.

Serving Suggestions And Complementary Side Dishes
This Ham and Noodle Casserole is a hearty, comfort dish, so pairing it with lighter, fresh sides helps create a balanced meal. A crisp green salad with a tangy vinaigrette is a perfect contrast to the creamy richness of the casserole, while simple steamed or roasted vegetables like green beans, broccoli, or asparagus add color and a fresh element to the plate.
For something a little more indulgent (translation carb loving), warm dinner rolls or a slice of crusty bread are ideal for soaking up every bit of that creamy sauce.
If you’re serving a crowd or want to round out the meal even more, consider adding a bright fruit salad or a refreshing coleslaw for a touch of sweetness and crunch. These easy pairings keep dinner simple while making the whole meal feel satisfying.
Storing Leftovers And Reheating Tips
Leftovers of this Ham and Noodle Casserole store beautifully, making it a great make-ahead meal. Once cooled, cover the dish tightly or transfer portions to an airtight container and refrigerate for up to 3–4 days.
If you’d like to keep it longer, you can freeze the casserole for up to 2 months—just be sure to wrap it well to prevent freezer burn.
TIP: I love to freeze casseroles in disposable aluminum serving dishes. This way, when a friend or neighbor needs a meal, I have one ready and no one has to return dishes or wash them!
When it’s time to reheat, add a splash of milk or broth to help bring back that creamy texture, as the noodles will absorb some of the sauce while stored.
Individual portions can also be reheated in the microwave at short intervals, stirring in between to ensure even heating.
