Easy And Delicious Basil Pesto Recipe

I’ve always loved Pesto and use it in most of my Italian dishes! Nothing beats “homemade” and it’s SO easy to make!

There’s something about fresh basil that instantly feels like summer. Maybe it’s the way the leaves perfume the kitchen the moment they’re picked, or how just a handful can transform the simplest ingredients into something unforgettable.

Every year, when my basil plants start producing more than I can possibly use, homemade pesto becomes a staple in my kitchen. It comes together in just a few minutes, yet tastes like something you’d order at a favorite little Italian café. Bright, fresh, and bursting with flavor, this easy basil pesto is one of those recipes you’ll find yourself making again and again.

While it’s delicious tossed with hot pasta, pesto is incredibly versatile. Spread it on sandwiches and wraps, swirl it into soups, spoon it over grilled chicken, fish, or vegetables, drizzle it on pizza, or stir it into scrambled eggs for an easy flavor boost. Once you make a batch from scratch, you’ll discover endless ways to enjoy this fresh, vibrant sauce all year long.

  • 1/3 cup toasted or raw pine nuts, almonds, walnuts, pecans or pepitas
  • 2½ cups packed fresh basil leaves (about 3 ounces or 2 large bunches…but you can be flexible with this amount)
  • ¼ cup grated Parmesan cheese
  • 1 Tablespoon Lemon Juice
  • 3 teaspoons minced garlic or 2 cloves of garlic roughly chopped
  • ½ teaspoon fine sea salt
  • ½ cup extra-virgin olive oil

This recipe comes together quickly, so I recommend, for ease, to gather all your ingredients beforehand and have your food processor ready to go!

I like to toast the nuts or seeds for added flavor. Traditional pesto is made with pine nuts, but don’t worry if you can’t find them, or they’re a little out of your budget. Walnuts, almonds, pistachios, or even pepitas make delicious substitutes, each adding its own unique flavor while still creating a wonderfully creamy sauce.

Place 1/3 cup pine nuts, or more…I toast extra to have on hand…in a dry small non-stick skillet over medium-high heat.

Using a wooden spoon, stir the nuts in the skillet until they start to turn golden brown. Turn the heat off and continue to stir until the nuts reach the desired toast.

Remove from the skillet and place on a paper plate to cool. Store any excess in a Ziploc bag until ready to use.

In a food processor, or blender, add toasted nuts, garlic, Parmesan cheese, and salt. Add olive oil.

Add a healthy squeeze of lemon juice. This helps keep everything fresh and green! (Don’t judge my 30+ year-old food processor. I’ve scrubbed till I’m blue in the face to remove years of salsa and pesto making…to no avail!)

Blend on high for 1–2 minutes. Add additional Olive Oil while blending to reach the desired consistency. I usually add another 2–3 tablespoons.

Always taste your pesto before finishing! Depending on your basil, you may want to add more lemon, salt, or pepper. Give it one more whirl and taste again.

For the best pesto, start with fresh, vibrant basil. When choosing basil, look for bright green leaves that are fragrant and free of dark spots or wilting. Smaller, younger leaves tend to have the sweetest, most delicate flavor, but larger leaves work beautifully too. If you’re picking basil from your garden, harvest it in the morning after the dew has dried for the best flavor.

Use freshly grated Parmesan for the richest flavor.

Choose a good-quality extra virgin olive oil since it’s a major contributor to the pesto’s flavor. A smooth, fruity olive oil complements the fresh basil without overpowering it.

Pine nuts are traditional, but walnuts or almonds make delicious substitutes. Finally, be sure your basil is completely dry before blending to create a rich, creamy pesto that stays fresh longer.

Garlic adds that signature savory bite, while a squeeze of lemon brightens the flavors and helps keep the basil looking vibrant.

One of the best things about homemade pesto is how easy it is to make it your own.

As I’ve mentioned, you can swap the pine nuts for walnuts, almonds, or pistachios, or try adding spinach or arugula with the basil for a different flavor.

You can also stir in extra Parmesan for a richer sauce, add a pinch of red pepper flakes for a little heat, or squeeze in more lemon juice for a brighter finish. All of which I may be guilty of!

Store homemade pesto in an airtight container in the refrigerator for up to one week. To help keep it bright green, pour a thin layer of olive oil over the surface before sealing the container.

For longer storage, freeze pesto in ice cube trays, then transfer the frozen cubes to a freezer-safe bag for up to 3 months. Thaw in the refrigerator or stir a frozen cube directly into hot pasta, soups, or sauces. This is one of my favorite “tips”. It’s a great way to add additional flavor to recipes quickly and deliciously!

Pesto is delicious tossed with your favorite pasta for a quick, easy meal or side dish, but that’s just the beginning.

Spread it on sandwiches and wraps!  Spoon it over grilled chicken or fish. Drizzle it on pizza, or use it in place of marinara sauce for the base of your pizza. Stir it into soups for a burst of fresh flavor.

It also makes a tasty dip for crusty bread or fresh vegetables and adds a bright finish to roasted potatoes and grilled vegetables. The uses for this recipe are endless!

Ingredients
  

  • cup Raw pine nuts Substitutions: almonds, walnuts, pecans, or pepitas
  • 2 cups Fresh basil leaves Packed, about 3 ounces or 2 large bunches
  • ¼ cup Parmesan cheese grated
  • 1 Tablespoons Lemon juice
  • 3 teaspoons Garlic minced
  • ½ teaspoon sea salt
  • ½ cup extra virgin olive oil 2–3 additional tablespoons to reach the desired consistency.

Instructions
 

  • Gather all your ingredients.
  • Add fresh basil leaves, nuts, garlic, olive oil and cheese together in a food processor. Add lemon juice. Blend until finely chopped.
  • Slowly pour in the additional 2–3 tablespoons of olive oil into the processor, running until well combined, and the desired consistency is reached.
  • Taste test. Add additional salt, pepper, or garlic. Blend again. Place pesto sauce in a jar and store up to 2 weeks in the refrigerator or freeze in ice-cube trays and store up to 3 months in a Ziploc bag.

Notes

To toast pine nuts, place nuts in a small non-stick skillet over medium-high heat. Stir until lightly golden brown. Remove from heat and place on a paper plate until cool.
