“What’s for dinner?” Is every Mom’s favorite question! (I’m exaggerating friends! I think we all inwardly moan when this is asked!) If you’re looking for a good way to address that question…this Creamy Alfredo Lasagna dish may just be the ticket!
There are pasta dishes… and there are PASTA dishes!
This Spinach Alfredo Chicken Lasagna Roll-Up is one of “those” pasta dishes! Maybe it’s the buttery Alfredo sauce bubbling away in the oven, or the smell of garlic and cheese floating through the house like the world’s best dinner invitation.

Whatever it is, these little lasagna roll-ups disappear faster than I can say, “Don’t forget the garlic bread!” They’re creamy, cheesy, packed with tender rotisserie chicken and spinach, and smothered in an easy homemade Alfredo sauce.
This pasta dish makes you think you’re in Italy sitting on a veranda, violin music softly playing, surrounded by beautiful Italian accents. One bite and you’re living your dream vacation. Maybe not your “dream vacation”, but your foodie vacation!
That is one of the many things I LOVE about food. It can transport you through sight, taste, and smell.

Ingredient List
- 10-12 Lasagna Noodles, cooked al dente, and drained.
- 1–15 ounce container of Ricotta Cheese.
- 1½ cups shredded Mozzarella Cheese, divided into 1 cup and ½ cup.
- ½ cup Parmesan Cheese, freshly grated.
- 1 large egg
- ½ cup chopped spinach, frozen, thawed, and drained (press to remove excess moisture).
- 2 cups shredded Rotisserie Chicken.
- 1 teaspoon garlic, minced.
- ½ teaspoon cracked black pepper.
- ½ teaspoon salt.
- 1 Tablespoon (heaping) prepared pesto sauce.
- Fresh Parsley for garnish (optional)
Alfredo Sauce Ingredients
- ½ cup butter, melted
- 1–8 ounce package cream cheese, softened.
- ¾ cup Parmesan Cheese, Shredded.
- ½ cup white wine (optional).
- ¾ cup milk.
Step-By-Step Instructions
While this recipe may seem a bit labor-intensive, I promise if you follow my steps, it all comes together quickly and easily!
Begin by preparing your baking dish so it is ready when you are. Spray a 9×13 baking dish with cooking spray. Set the dish aside until ready.
Lasagna Noodles
Fill a large pot with water and bring to a boil. Add 11-12 lasagna noodles. Follow the instructions on the back of the package. Cook the pasta to al dente. Drain and rinse with cold water.
TIP: I like to prepare an additional 2–3 extra noodles in the event some of them break during cooking.
Preparing the Filling
In a medium-sized bowl, add the 15 oz. container of whole Ricotta Cheese. (You can use skim if you want…but this is a “come to momma’s thighs” kinda dish!) Add one cup of Mozzarella cheese, ½ cup grated fresh Parmesan cheese, 1 teaspoon minced garlic, 1 heaping Tablespoon Pesto Sauce, and ½ tsp coarse black pepper and salt.
Stir well to combine ingredients.
HELPFUL TIP: My tip for adding Italian seasoning to most pasta dishes is a tablespoon of prepared Pesto sauce! It incorporates instant flavor into any Italian dish.

Next add one egg and mix well to incorporate.
TIP: Why do we add eggs to the filling? To help “bind” the ingredients together.

Add two cups of shredded or chopped Rotisserie chicken, add 1/2 cup of well-drained thawed frozen chopped spinach. Mix together well
TIP: Press all the excess water out of the spinach before adding it to the cheese mixture.

Assembling the Roll-Ups
To assemble the roll-ups, lay the noodles on a flat surface. Place 2–3 heaping tablespoons of the filling along the noodles. Using the back of the tablespoon, spread the filling the entire length of the noodle. Filling should be about 1/4 inch thick.

Rolling the Lasagna Noodles
Begin at the end nearest to you, and gently roll the lasagna noodles to the opposite end. You don’t need to roll them tightly. We don’t want all that yum squishing out the sides. (That would be like a muffin top on a lasagna noodle. Let’s not!)

Once you have your noodles all rolled up, place them seam side down, in the prepared 9 x 13 baking dish. I recommend placing the rolls the long width of the baking dish in rows of three.
I generally get 11 rolls. However, I could easily get 12 if I wasn’t such a “happy filling stuffer” when I first started out. I think they’ll be happier, all big and puffy! (Okay fine… I was thinking I’d be happier if they were big and puffy!)
Set the stuffed rolls aside while you prepare my EASY homemade “cheater” Alfredo sauce!

Easy Homemade Alfredo Sauce
I always like to offer options to make preparation easier. I realize time is always an issue when it comes to making dinner. My homemade Alfredo sauce comes together in about 5 minutes, but you can certainly use a bottle of your favorite pre-made Alfredo Sauce.
To make my cheat sauce… in a large skillet over medium heat, melt one stick, or a half cup, of butter. Add one package of softened cubed 8 oz. cream cheese. Whisk until blended.
TIP: Whisking helps breakdown the cream cheese for easier blending.

Add the milk. Whisk until combined. Add 3/4 cup of grated Parmesan cheese, 1/2 cup white cooking wine (optional), and, if necessary, additional milk to reach the desired consistency.

Preparing for Baking
Time to bring everything together and pop this delicious dish into the oven!
Pour the Alfredo sauce, homemade or bottled, over the top of the roll-ups, making sure each roll is completely covered in sauce. Sprinkle with remaining mozzarella cheese. Garnish with fresh parsley if desired.

Baking Instructions
Bake in a preheated 350° oven for 35–40 minutes until the cheese is melted, slightly golden brown, and the sauce is bubbly.

Serving Suggestions and Substitutions
One of my favorite things about these Spinach Alfredo Chicken Lasagna Roll-Ups is how easy they are to make your own. I always encourage getting creative with my recipes. Have fun in the kitchen, friends! Here are some of my favorite suggestions.
- Have leftover turkey instead of chicken? Go right ahead and use it! Rotisserie chicken is my weeknight hero, but any cooked, shredded chicken works beautifully. You can even skip the protein altogether and go all veggies and cheese!
- Not a spinach fan? Try chopped kale (give it a quick sauté first) or even steamed broccoli for a delicious twist.
- You can swap cottage cheese for the ricotta if that’s what you have tucked away in the fridge.
- If you’re feeling adventurous, toss in a handful of sautéed mushrooms or roasted red peppers for extra flavor.
- Want a richer Alfredo Sauce, substitute heavy cream for the milk. You can also replace chicken broth in place of the wine.
Serving Suggestions
When it comes time to serve, all this creamy, cheesy goodness pairs perfectly with warm garlic bread or my homemade Buttery Garlic Parmesan Breadsticks for soaking up every last bit of that luscious Alfredo sauce.
A crisp green salad with a tangy vinaigrette or a luscious Caesar Salad adds just the right amount of freshness to balance the richness of the casserole. If you’re feeding a hungry crowd, roasted broccoli, asparagus, or green beans make wonderful side dishes.

Storage Tips
If you’re lucky enough to have leftovers, you’re in for a treat because these Spinach Alfredo Chicken Lasagna Roll-Ups are just as delicious the next day!
Let the casserole cool completely before transferring the roll-ups to an airtight container, or simply cover the baking dish tightly with foil or a lid. They’ll keep beautifully in the refrigerator for up to 4 days. To reheat, warm individual portions in the microwave until heated through, or pop the entire casserole into a 350°F oven, covered with foil, until it’s hot and bubbly again.
These roll-ups are also freezer-friendly, making them a wonderful meal to have waiting for those busy days when cooking is the last thing on your mind. However, I recommend only preparing the “roll-ups” and freezing them on a tray and then placing them in a large freezer Ziploc bag.
Alfredo sauce tends to “split” when frozen. Therefore, I don’t recommend adding the sauce before freezing.

Spinach Chicken Alfredo Lasagna Roll Ups
Ingredients
- 10-12 lasagna noodles cooked and drained

- 1½ cup Mozzarella Cheese Shredded, divided into 1 cup and 1/2 cup
- ½ cup Parmesan Cheese Fresh, grated
- 1 large egg
- ½ cup Frozen spinach Thawed, chopped spinach (pressed in paper towel to remove excess water)
- 2 cups Rotisserie chicken Shredded, or chopped
- 1 teaspoon Garlic minced
- ½ teaspoon Black pepper
- ½ teaspoon salt
- 1 Tablespoons Pesto sauce
- Fresh Parsley for garnish, optional
Alfredo Sauce
- ½ cup Butter
- 1 8 oz. Cream cheese Softened, cubed
- ¾ cup Parmesan cheese Shredded
- ½ cup White wine (optional)
- ¾ cup milk
Instructions
- Spray a 9×13 baking dish with cooking spray and set aside.
- Fill a large pot with water and bring to a boil. Add 12 lasagna noodles and prepare per the instructions on the package. Cook to al dente. Drain and rinse the noodles.
- In a medium-sized bowl, add 1–15 oz. container of ricotta cheese, 1 cup mozzarella cheese, ½ cup Parmesan cheese, 1 tsp. Minced garlic, 1 Tablespoon pesto sauce, ½ tsp. coarse black pepper and salt. Mix well.
- Add one large egg and mix together. Add drained spinach and 2 cups of shredded or chopped chicken. Mix until well blended.
- On a flat surface lay lasagna noodles. Place 2-3 large heaping tablespoons down each lasagna noodle. Using the back of the spoon, spread the filling down the length of each noodle.
- Starting at one end, gently roll noodles toward the other end. Place seam side down in the prepared 9 x 13 baking dish. Continue until all noodles are stuffed, rolled, and placed in a baking dish.
- In a large skillet over medium heat, melt ½ cup of butter. Add softened creamed cheese. Whisk until combined. Add milk. Add grated Parmesan cheese, white wine. Mix until smooth and creamy. If necessary, add additional milk to achieve the desired consistency.
- Cover with prepared Alfredo sauce. Sprinkle with 1/2 cup of shredded mozzarella.
- Bake in preheated 350° oven for 35-40 minutes until sauce is bubbly, cheese is melted, and edges are turning golden brown.

Hi! I have not tried freezing them however, they have very similar ingredients to Lasagna, as far as cheese mixture, etc. So I think they would freeze without any issues. I’d freeze them. I think it’s a great idea to make them ahead of time for the holidays and have them ready to go. Love that idea!
